Baked Macaroni and Cheese

Like noodles with cheese melted on them--feel like I could have just nuked some cheese on em & saved the time I spent baking them. My 17 yr old son actually chose this recipe-sadly it ended up in the trash. Will keep looking for a good mac n cheese recipe.

Nacho Cheese Sauce

Perfect!! Just what I was looking for! Used Kraft White American Slices & Sliced Provolone-doubled & added a can of sliced green chiles. My kids were in Heaven! Thanks!

Deliciosa Salsa Verde

This is the recipe I use for my Salsa Verde!! Only thing I do different roast everything & I also add a few garlic heads, too!! The best salsa!! IThe sugar helps with the acidity. Freezes well, too~~My 15 yr old son will eat this straight out of the bowl.

Pork Meatballs

I made this tonight & it was so so so so good. I did change things up a bit, but not a lot. Here's how I made them. I used 1 lb. ground pork, fresh oregano & basil, 2 end bunches of green onions(mostly the white part), 1/2 c bread crumbs, 1/2 c parm cheese, dried parsley, 2 T garlic that you buy in the jar, 1 egg, & 2 T of Worcestershire sauce -made into meatballs & browned these in a pan. While the meat balls were cooking I used about 5 c of homemade beef broth & added a roux of 1/2 c butter & 1/2 c flour & added the roux when broth was boiling to make a think gravy. I poured the gravy on top of the meatballs along to 2 jars of mushrooms. Allowed this all to simmer for 20-25 min., making sure to scrape all the browned bits on the bottom of the pan into the gravy. Served over egg noodles with corn & pretzel rolls. Everyone loved it-even my picky 8 yr old. Thank you so much for this recipe-even though i didn't follow it to a T, it gave me a great base to make it my own! Am definitely making this again in the future!

A to Z Everything-but-the-Kitchen-Sink Chocolate Chip Cookies

Loved them-makes a ton of cookies!! Used butterscotch & choc chips-no nuts. Butterscotch kinda of overwhelmed them. Will try with peanut butter & choc chips next time. I cant stand coconut, but you cant taste it in these & actually makes for a nice consistency in the cookie. Thanks!

Lamb Barley Soup

So so so good. Used 4 short beef ribs w/2 lbs of lamb shoulder. Forgot the tomato soup & used beef base for the broth-making 4 quarts of broth. Used 2 whole onions-about 4 stalks of celery-& the diced canned tomatoes. Used quick cooking barley(the whole box) & it made it like a stew-just what I wanted. Am adding mushrooms after the kids eat it. Just exactly what I was looking for-delicious & easy!

Hamburger Steak with Onions and Gravy

This was so good!! I added onions, green pepper, & garlic that I had put in my food processor. Also added dried parsley & omitted the garlic & onion powder since I used fresh & forgot to use the sherry. Used 1/2 seasoned bread crumbs & 1/2 panko. More Worcestershire sauce than called for. For the gravy I used beef au jus mix that I got from the deli when I purchased roast beef--it was perfect. I also transferred to a casserole dish & baked covered for 15 min. at 450 instead of letting them simmer on the stove top. They were so tender & delicious. Served with french fries & corn. Everyone enjoyed them-a miracle in this house;) Thanks so much!

Amish Macaroni Salad

Doubled the veggies, added 4 eggs, used a 16 oz box of macaroni, used 1/4 cup of sugar, subbed red wine vinegar, & used more salt & pepper. Refrigerated for about 6 hrs-had to add a bit more mayo. Pretty good! Added some tuna in it for my Husband's lunch the next day.

Corn Dog Muffins

Wow everyone loved these to all of our surprise. I used a square glass baking dish (make them nice & thick) added 2 cans of green chiles & 2 packs of hot dogs~~omitted the cheese. Had to bake for an hour. Served hot dog chili, jalapenos, sour cream, chopped onions, & nacho cheese sauce on the side for toppings. I ate mine with a drizzling of Sriracha & Honey Mustard. Quick, simple, & different. Thanks!

Quick and Easy Chicken Spaghetti

I used 1 1/2lb of chicken breasts & grilled them on the stove top with a generous sprinkling of Montreal Chicken Seasoning. Sauteed 1/2 a green pepper & onion in separate pan. Added a family size can of cream of mushroom soup, 2 mild cans of Rotel, & a large can of mushrooms. Used pasta shells & a small loaf of Velveeta. Baked in the oven for 30 minutes @ 350 degrees. Was extremely bland, BUT Sriracha added to my bowl made this meal outstanding! Dont know if I would eat it without the Sriracha. My husband & oldest son liked it-not a hit with the 7 yr old. Would probably make again in a pinch.

Korean Spicy Marinated Pork (Dae Ji Bool Gogi)

We really enjoyed this dish. I used Garlic Chili Paste & instead of sugar I added pineapple juice & a T. of hot pepper jelly. I also added 2 tsp. of sesame oil to the marinade. Spicy & delicious! Thank you!

Eggs Benedict Breakfast Pizza

Our family really really enjoyed this. I baked the rolls for about 7 minutes before topping it with sauce, then Eggbeaters, more sauce, chopped Oscar Meyer Virginia Ham, & a very light layer of mild cheddar. Baked it for about 10 more minutes & served with steamed asparagus--DELICIOUS!! I used Knorr Hollandaise Sauce & store brand crescent rolls. I baked mine at 375 degrees for a total of maybe 20 minutes~~ 30 minutes seems liked it would be WAY too long to bake-would make the sauce disappear IMO. My Husband & Son love Hollandaise Sauce-I'm not a huge fan, but it was wonderful on this "pizza"!! Thank you for a interesting twist on Eggs Benedict!

Christmas Breakfast Sausage Casserole

Really good-great easy meal on Christmas morning. I used 10 eggs & 2 full cups of 2% milk. I added yellow & green onions, green peppers, & sauteed mushrooms(on the side). I didn't have any croutons & though plain white bread would be bland, so I used Stove Top Stuffing instead & it was very flavorful! Will definitely make this again on Easter & try it with ham & then next Christmas-one with bacon & another with sausage again. Thanks for the start of a new tradition here:)

Caramel Snack Mix

So good!! I used Crispex & mixed nuts from The Dollar Tree. When I took it out of the oven I stirred it for about 10 minutes in front of a fan-nothing stuck together-It was NOT like peanut brittle-it was perfect! Thanks so much!

Juicy Roasted Chicken

Awesome juiciness!! I cooked it in a roaster pan breast side down & then flipped it over for the remaining hour. Everyone loved it-used a variety of spices, real unsalted butter, & only celery=perfect! Even made me own gravy & was successful for the 1st time in 40 yrs! Thanks so much.

I am the submitter of this recipe-make sure you use the green chilies in these~~they really make these outstanding!! I prefer mine without cheese. You can defrost them overnight in the fridge.
