Chicken Tortilla Soup I

After reading the reviews I went with the following suggested changes and this soup was fantastic with little effort. Saute diced chicken in olive oil with 5 cloves of fresh minced garlic and the chopped onion. I transferred this mixture to a crock pot and added 1/2 tsp chili powder, substituted 1 tsp cumin for the oregoano, tomatoes, 1 14.5 oz can of chicken broth, 1 chicken buillon cube, 2 cups of water, 1 can of corn (drained), 1 can chopped green chilis, 1 can of rinsed/drained black beans, 1/4 c cilantro. I let this simmer for 3 hours and served it topped with the chips, cheese, avacado and green onions.

Molten Chocolate Cakes With Sugar-Coated Raspberries

These were FABULOUS and soooo quick and easy. I made them around 4 p.m. and didn't cook them until 8 p.m. and they turned out perfect! I had 2 men leave the Giants divisional series game for seconds!! I cooked them in 8 ramekins dusted with shortening, flour and sugar, baked them 8 minutes (next time I will cook them for closer to 10 minutes) and plated them with raspberries and whipped topping.

Chicken In Basil Cream

This was a good recipe and my family loved it and said it's a keeper! I used 8 sliced mushrooms, 1 tsp. garlic powder and used fat free 1/2 and 1/2. I had to thicken the sauce with a little cornstarch due to the mushrooms, but it thicken really quickly. I served it over linguine. Next time I will use white wine instead of chicken broth and see if the flavor of the sauce is more pronounced.

Seared Tuna with Wasabi-Butter Sauce

This was AWESOME! Quick, easy, and my husband loved it. I will make this over and over again. I served it with asparagus (baked sprayed with olive oil and then sprinkled with pepper and sea salt) and a baked sweet potato. It was fabulous!

Phyllo-Wrapped Halibut Fillets with Lemon Scallion Sauce

This was great and so easy! I didn't have phyllo, so I used puff pastry instead and it worked great. I also used 1/2 lemon juice and 1/2 lemonade and the flavor was wonderful. The presentation is very impressive for guests!

Lemon Garlic Tilapia

This was fabulous! I didn't have enough fresh lemon juice, so I used a combo of fresh lemon juice, bottled lemon juice, and Newman's Lemonade - it was wonderful and easy! My husband raved about it!
