Spiced Pumpkin Dip

Reviewed: Oct. 24, 2009
I thought the recipe was very good except the orange extract. Honestly, when I looked at the recipe, I questioned adding the orange, but did it anyway since I'm no cooking/baking expert. Then I realized I should have went with my instinct. Other than that LOVED the recipe. WILL DO again, but next time without any orange extract at all. *If you like a stronger orange flavor, this recipe is for you! :) VERY quick and easy to make in just a few minutes!!

Toasted Pumpkin Seeds with Sugar and Spice

Reviewed: Oct. 31, 2009
Great recipe! I'd never had pumpkin seeds any other way aside from baked and salted. This was different and very good! I DID add cinnamon to them as I LOVE a lot of cinnamon. They turned out great. My husband can't stop eating them and one of my girlfriends also liked them (who had nevr tried them this way either)! I will definitely use this recipe from now on. Wish I had more seeds to make!

Pumpkin Chili

Reviewed: Nov. 2, 2009
LOVED the recipe as well as the group of Halloween guests we had over. As recipe calls for - was very liquidy and quite bland. Couldn't taste the pumpkin at all. Added 1 extra can of kidney beans, the rest of a 29 oz can of pumpkin, 2 extra Tbsp of chili powder, 2 extra Tbsp of pumpkin pie spice, and 1 Tbsp cumin. Then it was awesome!! Will definitely make this again, but without all of the tomato juice to start with and definitely more chili powder, pumpkin pie spice and some cumin. :)

Awesome recipe. Made it JUST as stated and it turned out perfect. Will definitely make again - will likely replace my traditional pumpkin pie with these!

Pumpkin Fudge

Reviewed: Nov. 2, 2009
I have NO idea what I did wrong. I followed the recipe word for word, minute for minute and it turned out SUPER hard. I literally could not break it apart with a Wustoff knife! I didn't even get a chance to mix in the chocolate chips and vanilla before it hardened. Threw the whole batch away. I was SO looking forward to pumpkin fudge too! :)

Simply Sensational Truffles

Not bad. Can really taste the cream cheese instead of a "truffle" taste. Everyone else really liked them though!

Remarkable Fudge

Reviewed: Dec. 12, 2009
AMAZING fudge. For the life of me I could not get my temp to reach the written temp and I cooked it WAY longer than 12 minutes, but the fudge still turned out amazing!! It was a LITTLE bit soft, but I would definitely rather have it that way than too hard, or fudge that is going to dry out after a few days. I will definitely be using this exact recipe a LOT in the future. I've never done this well at making fudge before ever!

Easy OREO Truffles

Reviewed: Dec. 12, 2009
I love oreos, so they weren't bad. A bit cream cheesy tasting, but everyone seemed to like them okay. I'd rather they taste more chocolaty than like cream cheese though.

Chocolate Chip Peppermint Cookies

Reviewed: Dec. 12, 2009
Great flavor - so good, but I definitely cooked these for a shorter amount of time than called for and they STILL turned out pretty close to rock hard. I may have to heat them up for 30 second befor eating to soften. I think I will make them again eventually, but definitely cut the time even more. Good flavor though!

Classic Goulash

Reviewed: Jun. 13, 2010
I used chicken instead of ground beef (we use chicken in a lot of recipes) and I also used whole wheat noodles. This ended up a bit more watery than I remember goulash being (it's been a LONG time since I've made it), but the flavor was great!

Zucchini Alfredo

Reviewed: Jul. 31, 2010
It was pretty good - something different. I used whole wheat penne pasta instead of egg noodles and I used canola instead of vegetable oil. I used skim milk and fat free cream cheese. Just making it a smidge healthier. :) I may add a bit more garlic next time as well as a few more seasonings.

Good recipe. I changed some things when I made these like adding chicken instead of hamburger, but overall, a good recipe! I love stuffed peppers!

Pumpkin Zucchini Bread

Reviewed: Sep. 17, 2010
Like the bread! I left out the walnuts since even though I personally love them, we intend to shre the bread with those who may not. I did add a touch more zucchini and will add even more next time I made it, which may be tomorrow! Other than that, it's great! Very moist and very tasty!!

Zucchini Crustless Quiche

Reviewed: Sep. 18, 2010
This is something I'd make again, but definitley change a few things. I definitley wouldn't put the items in the food processor for a whole minute each time. It ended up like baby food. I may just hit the pulse button until it looks well mixed. Also, I agree with not adding as much flour. To me (and my husband noticed once I said it) it tasted a little bit floury. Lastly, I may just add more spices to give it a bit more flavor. My husband said the flavor was good, but I think it needs a bit more. I"ll try it again though!
