About this Cook
Since I got laid off in February 2010 I've been keeping busy cooking 3 meals a day!! My husband and I have both gained _ _ pounds so far. I'm now cooking healthier and its working!! We both feel and look better. We've got a way to go and allrecipes is a great place to find healthy recipes.
My favorite things to cook
I love to eat and cook all food. - That was my first comment when I joined....Now I'll say my favorite thing to cook are vegetable dishes that don't make you miss having meat.
My favorite family cooking traditions
To cook together as a family...makes the cooking go faster and everyone gets input to how and what gets cooked. My mother was a wonderful cook....she cooked everything well and had some standards that were always birthday requests from all of us kids. I haven't been able to recreate any of her cooking as she rarely used a recipe and when she did she rarely followed it exactly.
My cooking triumphs
Then: I'm so busy that now I get excited when I just get to cook and it comes out well. Now: Not so busy anymore. I have been brushing up on my cooking skills and pulling out some equipment and tools I haven't used in years. There have been some real catastrophes, but I've been doing pretty well and would say I'm around 95% successful in making meals that both my husband and I enjoy.
My cooking tragedies
Then - I seem to have more of them lately...I don't leave well enough alone and over-salt, over-spice, over-cook or over-something quite a few dishes. Now - i still can't seem to try a recipe as its written..even the first time to see if it is good or not. My modifications work most of the time, and get better the more practice I get.

Fluffy Pancakes
Just made these for National Pancake Week. Very easy and very good. Fluffy and light. I thought I'd have some leftover for later this week, but my husband and I decided that we should honor this day by finishing the entire batch!!

Masala-Spiced Roast Chicken
Keeping to my New Years resolution to follow a recipe 100% the first time I try it (though there are ways around that rule). I just made the chicken and I'm very impressed. I had to make my own Garam Masala as I didn't have any pre-made. This was a very educational process. Just look at the number of Garam Masala recipes on this site alone. I chose one and loved the results. Those folks that didn't like this recipe should do some research on how to make your own. The variations of ingredients mean that every time you make this recipe it can taste different from the last time you made it. I'm going to use variations on more chicken, shrimp, talapia, etc. I think this recipe is a true winner for how easy it is to make, yet how complex the flavors can be with some effort. Thank you Countess!!
