Pumpkin Ginger Cupcakes

I didn't have any crystallized ginger, but they were fantastic without it. I made an orange cinnamon glaze (powdered sugar, cinnamon, orange juice, milk) instead of frosting and they were so moist and delicious!

Iced Pumpkin Cookies

These were absolutely delicious! Like other reviewers suggested, I used an entire 15 oz. can of pumpkin rather than only 1 cup. I also substituted 1/2 cup of brown sugar for 1/2 cup of the white sugar. I added pumpkin pie spice to the glaze to finish them off. They were the perfect texture...very moist.

Crunchy Romaine Toss

Delicious! I thought the dressing was a little bland so I added the seasoning packet from the ramen noodles and that was perfect. I also used cashews instead of walnuts - just a personal preference.

Vanilla Spice Bread

This bread was so warm and comforting. I flavor of the vanilla and spices were very subtle, but really made a huge impact. I used soy milk instead of real milk because my husband is allergic to dairy and it was still moist and delicious.

Butter Chickpea Curry

Amazing! This is by far my favorite curry recipe now. The first time I made it I made a few modifications based on what I had on hand and it worked out so well that now that's my standard. I substituted about 3 tbsp of tomato paste mixed into a cup of water in place of the tomato soup. I also used coconut milk instead of the cream. I think that gave the dish a little added sweetness and kept it non-dairy for my lactose intolerant husband. I've also used sweet potatoes with stellar results. Last time I made it I turned it into an entree for company by adding chicken. Delicious in every variation!

Super Grilled Salmon

This is some of the best salmon I've ever tasted. I didn't have a grill available, so I baked it, covered, in a 350 degree oven for 15-20 minutes. I've made it with various types of dry red wine (not just Shiraz) and it's wonderful every time. Thank you for this recipe!

Crispy and Creamy Doughnuts

I've made donuts a few times before trying this recipe and none of them compared. Instead of the usual donut shape I left them whole and filled them with blackberry jam. I made them for a party and people said they tasted like store-bought donuts. Very good recipe.

Cranberry Swirl Coffee Cake

So moist and flavorful! I read lots of reviews before beginning and took the advice to add a streusel topping. I made these into muffins. I made a half batch and got 6 large muffins (from a normal sized muffin pan), so I would guess a full batch would yield 12 muffins. I used an ice cream scoop to scoop a dollop of batter in the bottom of each tin, then about 1 teaspoon cranberry sauce, then more batter, more cranberry sauce, a little bit of batter to top, and then the streusel to finish. I baked them at 400 degrees for about 20 minutes. Perfect! I also used low fat sour cream and vanilla in place of the almond extract. I will definitely be making these again!

Cinnamon Hazelnut Biscotti

Really delicious! I doubled the cinnamon and sprinkled a bit of it on top of the cookie loaf before putting it in the oven. That made the cinnamon flavor really stand out. Add a drizzle of chocolate and these are divine!

Quinoa Salad with Grapefruit, Avocado, and Arugula

I was skeptical about the grapefruit, but it's one of my favorite fruits, so I gave it a try. I used parsley instead of cilantro because my husband hates cilantro and baby spinach instead of arugala because that's what I had. It was absolutely delicious! Really fresh and clean.

Scott's Buffalo Wing Sauce

This recipe is much better than plain hot sauce and butter. The sweetness from the ketchup and honey cuts a lot of the acidity from the hot sauce. The only change I made was to increase the amount of hot sauce and add some cayenne because I like spicy buffalo wings. Great basic recipe.

Honey Curried Roasted Chicken and Vegetables

This recipe was delicious. To cut down on cooking time, I used boneless, skinless chicken breasts, cut into large pieces. I also used both white potatoes and sweet potatoes. The sweet potatoes worked really nicely with the sauce. I got a lot of compliments. Thanks!

Sweet, Sticky and Spicy Chicken

This was wonderful. I followed other reviewers and coated the chicken in flour before frying it. I also added some sauteed onions and red bell peppers. It was the perfect amount of sweet and spicy. I did add a splash of mirin at the very end to round out the flavors. Really delicious and quick. Next time I might try using 1 tbsp honey and 1 tbsp maple syrup, just for a twist.

Gypsy Soup

This recipe is from The New Moosewood Cookbook. I've been making it for years. It's really delicious. My personal preference is to omit the celery and substitute red bell pepper for the green bell pepper. It's very unique and really warm and comforting.

Bread Machine Challah II

I've tried so many challah recipes and I like this one a lot. I followed a reviewer's suggestion and added an extra 1/2 cup flour to prevent stickiness. It had wonderful texture and flavor. The first time I made it I didn't have any honey, but after making it again with the honey added, I actually liked it better without because it was a tad bit fluffier. Really good!

Autumn Harvest Cookies

These cookies were delicious. I added an extra tablespoon or so of brown sugar and used 1 teaspoon of OJ because I didn't have any orange extract. The flavor was good, but a little lacking, so I made an orange glaze (powdered sugar, orange juice, and cinnamon) which added exactly what was missing. They got rave reviews from all of my guests.

Summer Squash Puffs
