Baked Snapper with Mandarin Oranges, Cashews and Ginger

My fiance and I thought this was a restaurant-quality recipe and so easy to make!! I couldn't find fresh mandarin oranges so I used a juice orange and canned mandarin oranges. Definitely sprinkle on the cashews and green onions over the top if you like them, it gives it great flavor and presentation on the plate! I will definitely make this again! Update: I have made this several times since I first discovered the recipe (ditched the fiance, kept the recipe :-)) and I just LOVE it! I have started adding a small, finely diced serrano pepper in place of the red chili flakes. I like the fresh, pepper flavor! I serve it over Basmati rice. YUM!

Chocolate Ribbon Pie

I make several of these pies at Thanksgiving and Christmas and never have any left over!! I have experimented with different pudding flavors & they are always a hit - oreo cookies & creme, mint chocolate chip, white chocolate, etc.! hands down the easiest dessert to make and always a HIT!!

Shepherd's Pie Daddy's Way

I make this when it's cold and dreary out (or when I need a quick & easy recipe)! However, instead of cream of mushroom soup I add a packet of dry onion soup mix and water while browning the ground beef. I put mashed potatoes on the bottom, a layer of the meat, a layer of frozen corn, another layer of potatoes, meat & corn then top it with shredded velveeta cheese and bake until cheese melts and it is hot all the way through! Great easy meal and reheats beautifully! You could probably even freeze it but I haven't tried that yet!

Spinach Enchiladas Verde

I have made this several times now and always add chicken. I also saute the spinach with garlic, olive oil & onion & season with salt & pepper before stuffing the enchiladas. I made this recipe Saturday evening, it was quick & turned out wonderful! The only thing I added was some shredded honey jalapeno rotisserie chicken I got from my local grocery store. I will say the flavor of the chicken added a wonderful touch to the dish. It tastes even better leftover - I have been eating it all week!

Chicken Piccata with Artichoke Hearts

I made this recipe as is for a dinner party. It was WONDERFUL! Everyone raved that it tasted like restaurant-quality! I served it with angel hair pasta and a big garden salad. Next time I may try adding sliced black olives & chopped tomatoes just before serving for some color....this recipe is a keeper!!

Marinated Baked Pork Chops

I was a little surprised that since the name of the recipe is Marinated Baked Pork Chops it didn't call for you to actually marinate them before cooking! But I followed other reviewers advice and marinated them for about 6 hours in a double bath of the sauce. I used about 1.5 inch thick chops and they were totally done (almost too done) within 20 minutes of cooking. Next time I will reduce the cooking time to 6-7 minutes each side. I made another batch of the sauce and basted them a few times while cooking. Even though they were a little more done than we prefer the flavor was very good. I served them with the Oven-Roasted Potatoes from this website and fresh green beans. Will definitely make again!

Chicken with Wild Rice and Vegetables Casserole

I gave it 4 stars b/c I made some changes. I used a can of reduced fat cream of mushroom soup, 1 can of milk & 1/4 cup of chicken broth (all I had) in place of the 2 cups of chicken broth. I also used a frozen veggie blend with carrots, peas, corn, lima beans & green beans. I mixed the rice, soup & liquids together and then poured in the pan. Poured the frozen veggies on top and then layered the chicken over that. Used sea salt, garlic powder, pepper & paprika. This turned out amazing and I can't wait to eat the leftovers for lunch today!! UPDATE: The leftovers were even better b/c all the flavors had time to mix together. You could definitely make this ahead of time & freeze until you want to serve it!

I have lived in Austin most of my life and agree this is one of the best margaritas!! I LOVE olives so I add some of the juice when mixing everything together! Also, skip OJ and use a splash of triple sec!!

Rustic Sausage Pasta

This dish was amazing - and even better the next day! I followed one reviewer's advice and diced the veggies up really small so each bite was full of veggies. It really made it wonderful!! I was planning to use two cans of diced tomatoes (b/c so many people said it needed more sauce) but realized I only had one so I improvised and threw in 3/4 of a can of creamy tomato soup (the kind you microwave and drink) and it came out wonderful!! I froze some for a future dinner and can only imagine how flavorful it will be when I eat it!! I used Jimmy Dean's sage flavored sausage and added some crushed red pepper to give it a kick. Will probably use spicy sausage next time. Thank you Heather for a terrific & easy to make recipe!!

Cream of Mushroom and Soy Sauce Pork Chops

I wondered how these ingredients would blend together but wow was Iimpressed. I used 1 can of reduced fat low sodium cream of mushroom soup and one can of cream of celery soup (all I had on hand), added fresh mushrooms and some minced garlic. I let the chops (thin, boneless) marinate for about an hour and then cooked them on high for 3-4 hours. They were so tender you could cut with a fork. I served over mashed potatoes and the sauce was AMAZING!! I will make these again and cook on low all day while at work!!

Amazing Italian Lemon Butter Chicken

This was fantastic! I added a little extra wine and used half and half instead of heavy cream. Don't skip the bacon, it absoutely makes the flavors of the dish come together!! YUM!!

Spinach Cheese Manicotti

This was wonderful!! I did saute the onions, garlic (& I added red pepper) in a little olive oil before mixing in with the cheese and spinach mixture. I also used fresh basil instead of parsley. It has wonderful flavor and I can only imagine it will taste even better tomorrow. I am also going to try freezing some to see how it does when reheated! Very yummy, thank you Ernie!

Creamy Tomato-Basil Pasta with Chicken

This recipe was fantastic! I added the cooked chicken to the pasta and sauce to mix it altogether just before serving. Don't skip on the basil, it adds amazing fresh flavor. Next time I may add capers or artichokes!

Chicken Tortilla Soup II

This was a good start. I used a 29 oz can of Rotel because I like spicy (but did omit the cayenne pepper). I sauteed the onion and a little bell pepper in oil with garlic & cumin and added this to the chicken broth & tomatoes. I used a rotisserie chicken (honey mesquite) and just chopped it up and put it in the liquid broth. I also added a can of black beans & a can of corn. I did not add the tortilla strips until the last 30 minutes so they would not be as mushy. I served it with shredded cheese and avocado. It was healthy and had wonderful flavor!!!

Chicken Spaghetti Casserole I

Update 1/30/12: I have made this several times & have started adding 1/2 a can of white wine & 1/2 a can of milk. It gives it great flavor!! This was a great start for the recipe. I boiled chicken tenders in water & 1 chicken bouillion cube & diced them. I substituted a can of original Rotel in place of the onion, bell pepper and pimento. I also used 1/2 cup of chicken broth in place of the white wine. I added diced black olives for color and they added a great flavor! Very creamy & flavorful!

Roasted Vegetable Lasagna

Very good! I did make a few adjustments. I put the eggplant & mushrooms in a ziploc with 2 cloves of garlic & olive oil & shook to coat before baking in the oven. I sauteed zucchini, onion & red bell pepper in olive oil, garlic (1 clove), salt, pepper & crushed red pepper for 5 minutes. I then added chopped spinach (frozen is all I had) & sauteed throughly. I layered the mixture per the directions and baked. It was flavorful & delicious!! You won't even miss the meat!!!

Rosemary Au Gratin Potatoes

This dish was amazing. Literally, my family & I were jokingly calling them "crack potatoes"!! I followed the recipe exactly until just before baking. I used a large glass pan & when I put the potato mixture in the dish I topped them with parmesan cheese (quite a bit), crumbled goat cheese (4 oz), cooked crumbled bacon pieces & more fresh rosemary. I cooked them at 350 for 50 minutes & they came out wonderful! Not a bite left after Easter dinner yesterday! Definitely a keeper!!
