Sparkling Punch

This is a wonderful, refeshing punch. Perfect for warm summer gatherings. Like others, I omitted the sugar as the punch didn't need it. Served it at a baby shower, where people drank as is or mixed with champagne, and got rave reviews! Will make this again.

False Cabbage Rolls

Just made this for New Years lunch. Great, easy recipe. I substituted a can of tomato sauce for one of the cans of soup, added Italian seasoning, garlic salt and a pinch of oregano as it simmered, and then served it in a bowl over rice. Yummy!

Melt-In-Your-Mouth Meat Loaf

This was a big hit with my family! I made the loaf following the recipe. Like others, I reduced the brown sugar in the sauce to 1 tbsp. The meat was cooked after 2 hours in the slow cooker, so I just switched it to warm until we were ready to eat. We could have used a little more sauce, so next time I will double it. This is a keeper!

Chicken Spaghetti Casserole I

I make this dish all the time--my husband, 1-yr-old daughter and any guests we have always rave! I also saute the bell pepper (usually red or yellow instead of green, family preference) and onion beforehand. I also add a can of tomato sauce and more cheese than it calls for, but again--personal preferences. This is easy to make and is very satisfying! Yummy.

Jenny's Cuban-Style Slow-Cooker Chicken Fricassee

This was a good recipe--I used chicken breasts and Adobo for seasoning as others recommended. I also threw in some carrots for extra veggies. About an hour before we were ready to eat, a lot of the liquid had cooked off, so I added chicken broth. Served it with rice, black beans and a fried egg on top and it was great!
