Chicken Potpie

Perfect! I halved the recipe because I only wanted one pie. I also used the recipe for a double inch pie crust (from Taste of Home Kitchens)...super yummy!

Chicken Fried Chicken

The flavor and texture of the coating was really good, but the chicken turned out dry. I think next time I'll use chicken tenders instead of chicken breast.

Juicy Roasted Chicken

Slow Cooker Chicken and Dumplings

This was very tasty. I only used one package of biscuits and threw in about 3/4 cup of frozen veggies. We ended up having lots of leftover filling, so I just used it to make a chicken pot pie the next day.

Oatmeal Cookie Mix

These cookies are very tasty and so helpful to have on hand when company comes over or you just need a sweet treat. I blended the oats (in a blender or food processor) just because I prefer a softer texture rather than a heartier oaty texture. I only got 9 cookies per batch using my cookie scoop, but that's just perfect for our little household!

Focaccia Bread

This is wonderful bread. I baked it in an 8X8 stoneware dish because I wanted the bread a little thicker for sandwiches. I can't have dairy, so I skipped out on the cheeses and it was still very tasty.

California Grilled Veggie Sandwich

This is fantastic, because there are so many varieties. I grilled zuccini, yellow squash, red and yellow pepper directly on the grill and sliced some onion and mushrooms that I grilled in tin foil. I used goat cheese (becuase I can't have dairy) and dijon mustard on the focaccia bread which I made from the recipe "Focaccia Bread" :) from this site. DE-licious!

Best Toffee Ever - Super Easy

This really was very easy to make. It was my first attempt at toffee and I was a little nervous, but it turned out great. As tempting as it is to keep stirring it, it really does make a big difference to just let it simmer...the bubbles will stir itself. Very tasty!

Peppermint Meringues

These are really yummy. Besides the 1.5 hour baking time, they're super easy to make. I doubled the recipe and it gave me about 70 meringues. I didn't follow the one inch apart rule...they don't expand when you bake them, so I just put them as close as possible to save room on the cookie sheet. I used my coffee grinder to crush the peppermint candies (I used the little round ones because that's what I had on hand) and it turned into a pretty pink powder that I dusted on top. they make great little holiday treats.

Soft Mahi Mahi Tacos with Ginger-Lime Dressing

These were VERY good. I don't like fish, but I've been trying to have it more since it's so good for you. Mahi Mahi is such a mild flvored fish, and with all these delicious tropical flavors, there's no fishy taste at all...just good for you yumminess.

I doubled this recipe, but still only used 5 eggs...I might not even use that many next time. I poured it through cheese cloth before AND after I let it chill. It was delicious and got lots of compliments!

Harvest Corn Chicken Chowder

This was tasty. I skipped the chicken and just used the ham. When I took a little taste test before I served it, it was a little bland so i through in a dash of ceyanne pepper and a couple spoonfulls of salsa and it added a little kick to it. Definitely worth trying!

Beth's Peach-Nectarine Muffins

These were really good...super moist. I've made them a couple times now and the second time I made them with two peaches (no nectarines) and since they were such large peaches, I should have only used about one and a half chopped. The end result was really moist and dense, but they sank a little during the cooling process due to all the moisture (I even baked them longer than the recipe suggested). My hubby still loved them, but I like them to be pretty too. :) So next time I'll be more careful about how much fruit I use.
