About this Cook
I've been teaching for about 7 years now, as a career change and I love it. I teach 5th grade - math and language arts. I've actually taught Cooking with Math in a summer program. The kids - and I - had a ball!
My favorite things to cook
I like to bake. I love to use herbs that I've grown in my herb garden. I am from New England and tend to cook down home "Swamp Yankee" favorites like Corn Chowder, Shephard's pie and Yankee Pot Roast. Not exactly calorie concious - but they sure warm you up on a cold day!
My favorite family cooking traditions
Hmmm..well, mom is Irish/French so there was not a lot of history of using spices there - other than salt & pepper. But after an Italian roommate and then an Italian/French husband - garlic and other spices/herbs are now my friends!
My cooking triumphs
I recently completed course 2 of the Wilton Cake Decorating classes and am looking forward to course 3. It's hard work but it looks so nice when you finish!

Chocolate Trifle
I make a more 'adult' version. Use chocolate or devils food cake mix. Bake cake according to directions (a sheet cake is fine). Crumble up cake and drizzle with Kahlua. Make chocolate instant pudding according to directions. Layer cake, pudding and cool whip in trifle bowl. On top layer of cool whip, decorate be drizzling chocolate syrup and sprinkle with Heath bar crumbles (found in baking aisle). This is YUMMY! Use as much Kahlua or as little as you want. If serving to the under -21 crowd you can drizzle with some coffee instead.

Chocolate Zucchini Cake III
Anything that gets my son to eat vegetables is great in my book..and this is super yummy! Substitutions: whole wheat flour instead of whole purpose. Subbed applesauce for 1/2 of the oil. Used a sugar/truvia blend instead of sugar. I also used 1 T of instant coffee dissolved in 2 T hot water so as to bring out more chocolate flavor. To cut down on sugar, I just slighly melt a bit of frosting and drizzle it on the top. Delicious...and my son thinks he's just getting chocolate cake!

Boston Baked Beans
This is a great recipe for homemade beans. The only change I do is omit the ketchup. No self-respecting Yankee I know adds tomato to their beans (just not our thing). Other than that...yum!
