Tofu Parmigiana

This was great. Made some changes though. 1. Reduced the Parmesan cheese, 2. added 1lb of sliced brown crimini mushrooms (sauteed with onion and sage before adding a layer onto the tofu), 3. used a mixture of breadcrumbs, wheat germ and freshly ground flaxseed to coat the tofu in. Yummy!

Red Cabbage

Loved this one. Just smelling it cook brought back memories from long time ago when my mom made this. Only thing missing is the onion. Didn't put the cinnamon. Poked the cloves into the apple (usually you poke it into the onion to retrieve it easily). Added more apple as I love the taste tart apples bring to this.

Heavenly Halibut

Was good, but I will have to find ways to make this less rich/fatty. Will also try it with Tilapia as we like that fish, too. Thanks for the recipe!

Ratatouille

I used very little oil and omitted the salt entirely and still the Parmesan cheese made it too salty for my taste. Will make it again substituting the Parmesan Cheese with a Breadcrumb/ground Flaxseed mixture and topping it all with shredded cheese. Good Recipe

Stuffed Zucchini

I used lean ground turkey instead of beef and sausage. I also use 1tbs each of bread crumbs, wheat germ and freshly ground flax seed to give it a bit more fiber and 'good stuff'. I really liked it and even my kids ate their half of the zucchini. A keeper for sure!

Green Risotto with Fava Beans

I used brown rice as I didn't have other in the house. I also should have used more water in resolving the vegetable broth cubes...was a bit salty for me, but think it's just a 'user-error' and so I'd like to give a 4.5 as I will make it again.

Cod with Italian Crumb Topping

Thanks for this nice recipe. Tried it with Tilapia as Cod was sold out. Will make it again. Wasn't a fan of the eggwhite, so next time I will use lemon juice before topping it with the crumb mixture.

Cream of Fresh Tomato Soup

Two tomatoes are definitely not enough as I added one small can of tomato soup to add some tomato taste and also make it more red to look like tomato soup. Will make it again with more tomatoes, more onion and perhaps 1 TBSP tomato paste to give it the taste I like it to have.

German Potato Pancakes

Really liked this recipe; reminded me on home when I was little and my grandma made this with fresh out-of-the-garden applesauce. I served it with pear sauce from Trader Joes and it was really good. Too bad there is not a healthier way of frying the 'Puffer' as I really wanted a Schnaps afterwards to give my stomach a fat-break. Will make this again from time to time.

Potato Spinach Casserole

Loving Potatoes and Spinach I thought this would be great. I was disappointed how bland it was. I will make it again, but double the spinach and fry it first with the green onions and some minced garlic and onions. Then add it to the mashed potatoes and reduce the sour cream.

Gourmet Mushroom Risotto

I will definitely make this again! Made a few changes (1) used crimini and white mushrooms (2) used Carnaroli rice, (3)omitted the butter at the end (4) used ~40% more broth then called for (5) used less Parmesan cheese. I'd double the wine if my kids weren't eating also. I made it for 4 (and that turned out to be a lot of food) in the hope to have lunch leftover, but my 6 year old ate more then 1/3 !!! and so there's nothing left.

Broiled Tilapia Parmesan

My husband, whom I convinced to eat more fish this year, hesitated when I had him pick out a fish at the store. After I prepared this recipe he said it's really good. This is amazing as he never compliments any food, and now it's a compliment for fish recipe!!! Definitely a keeper; the this recipe that is ;-)

White Chocolate Raspberry Cheesecake

I made this for Mothers Day. Even though it was too rich for my taste (I like to make cheese cake with German Quark which makes it lighter) the party of 25 thought it was outstanding. Already got requests to make it again. I give it a 5 due to the overwhelmingly positive response.
