Chicken Scampi II

I made this last night and my husband and I said it was one of the best meals I have ever made. I did change up the recipe slightly based on other reviews. Floured the chicken, added a little wine, bell pepper, onion & used fresh chopped parsley. I also used chicken tenderloins instead of just chicken breasts. The chicken was ultra tender. Don't skimp on the herbs. They do make a big difference. This tasted just like Olive Garden's recipe or better. Try it- you will positively love it.

Ocean Spray® Oatmeal Cranberry White Chocolate Chunk Cookies

I did not like these cookies at all. I went right by the recipe and they were blah. Not sweet enough and way too many cranberry's. They did not spread out at all....just sat on the baking sheet in clumps and they had no taste hardly at all. I would not recommend this recipe. You will be wasting your time and $.

Chewy Coconut Cookies

I don't get all the good reviews here. The only thing I changed in the recipe was that I added 1/2 tsp coconut extract. These are not bad, but they are not worth 5 stars. They are just okay. They tasted a little on the salty side to me too. Anyway, I doubt that I will make them again.

Garlicky Baked Butternut Squash

Sorry, but I followed this recipe to the letter and it just didn't do it for me. My husband usually likes just about everything I make and he didn't even like it. The combination of flavors taste too garlicky or something. I think I like this type of squash on the sweet side.

Balsamic Roasted Pork Loin

I was extremely pleased with this recipe, even though I only marinated it for about 3 hours. I did add 1/4 cup of honey which another reviewer mentioned and I cooked it in a cooking bag. It was very tasty (not vinegary at all) and really really tender. I will definitely make this again.

Orange Chocolate Chip Cookies

Made these cookies last night and went exactly by the recipe except I used 1&1/2 tsp of orange extract instead of zest and didn't add nuts. I was hoping that they would be thin and chewy and that's exactly how they turned out. To me they were perfect. Just enough orange flavor and really chewy. I think the real trick for them to come out chewy is to let them cool on the baking sheet. I took some to my neighbor and all she could say when she bit into one was "Ummmmmm-ummmmmm- ummmmm" I am going to use this recipe instead of the popular toll house cookie recipe for when I just want regular chocolate chip cookies (with vanilla extract)they are so good. I can't thank you enough for posting this recipe. I will be making these again and again.

Blueberry-Lemon Pound Cake

I think the cake was pretty good. It just didn't seem sweet enough or something seemed like it was missing. It was moist but not real moist. It makes a really heavy cake. I did as suggested and beat the batter by hand while adding the flour, etc. I don't think my mixing bowl would have been large enough if I hadn't. All in all it was okay but I don't think I would make it again.

Parmesan Chicken

I saw this recipe and it looked so easy I decided to give it a try. I am so glad that I did. It is scrumptious. I did not change a thing and the chicken was so moist it was unbelievable. I don't know what in the recipe makes it so moist but it is so much better than any chicken parmesan I have made before. Try this, you will not be disappointed.
