Shredded Apple Carrot Salad

I bought, but then forgot to put in the sesame seeds. Other than that, I made the recipe exactly as written. It was much too tart for my taste. If I ever make it again, I would definitely use a sweet apple, and reduce the amount of lemon juice and vinegar. The salad was easy to prepare, and very appealing visually.

Winter Fruit Salad with Lemon Poppyseed Dressing

RUN, don't walk, to the nearest grocery store and buy the ingredients for this salad....it is FABulous!!! I made it exactly as written and served it to my bridge group yesterday.....everyone asked me for the recipe. Truly delicious. I will definitely make this again! I may try reducing the sugar slightly and adding more cranberries next time, but that's just personal preference. Great recipe...thanks so much for sharing it!

Carrot Souffle

I halved the recipe, using only 1 egg, and 2T of sugar, and pureed it in the blender. It was quite good - tastes like sweet potatoes, but still too sweet. I'll omit the sugar completely next time.

Asparagus Cashew Rice Pilaf

Instead of spaghetti, I chopped up leftover cooked angel hair pasta, and sauteed it with the asparagus, onion, and garlic. I then added long-grain white rice and the seasonings, and cooked it all in chicken broth. Delicious!

Corn and Pea Medley

I liked the taste, though my daughter found it a little tart. However, the combination of small corn kernels with large snap peas made it difficult to get a forkfull that contained both vegetables. Instead of sugar snap peas, I think this might work better with asparagus or green beans cut into 1" pieces.
