Parmesan Garlic Rolls

My husband's reaction after stealing a bite while these were cooling was "Wow!". They are delicous and easy to make. I served them with sausage and lentil soup, and these rounded out the meal perfectly! I'll be making them again.

Chocolate Caramel Brownies

These are amazing - thanks for sharing! I used dark chocolate chips instead of milk chocolate chips, and added whole pecans on top to make it more of a turtle brownie. Yum!

Honey Mustard Salad Dressing

The ingredients themselves are good (besides the onion - use onion powder instead), but the mayo takes over this recipe as written. Use half of the mayo called for, add twice as much mustard, and make sure to use apple cider vinegar - it turns out much better!

Sweet Coated Pecans

Delicious and so easy! I increased the sugar to 1 cup and the cinnamon to 1 tbl as others have mentioned. I also added 1/2 tbl of vanilla extract to the water before adding the egg white. To make the egg white froth faster, put the whisk and bowl in the refrigerator or freezer for a few minutes. I gave these away as Christmas gifts - everyone loved them! I will definitely be making them again!

Apple Butter Pork Loin

Very good! I didn't have apple juice or cider, so I sliced up a honey crisp apple and added that to chicken broth instead. I also cooked the pork in a slow cooker instead of the oven. My boyfriend couldn't believe how tender it was! A one-pound pork loin was enough for the 2 of us. Like others have mentioned, the cooking liquids make a delicious gravy which I think really made the dish. Just whisk in about a teaspoon or so of cornstarch.

Quick and Easy Chicken Noodle Soup

Delicious basic recipe! My boyfriend was amazed at how I was able to make "homemade" soup that quickly. I used about a cup and a half of rice instead of the noodles.

Lemon Garlic Tilapia

Perfect simple dish. Melted the butter with the garlic and cook for 10-15 minutes as others suggested. My boyfriend and I both loved it, and I will definitely make it again.

Ratatouille

Great recipe! The only change I made was cooking it in the crockpot instead of the oven (after sauteing the egglant). I put it all in the crockpot on high for about an hour and a half and it was cooked perfectly. Served it over polenta. Yum! I will definitely make it again.

Summer Rainbow Salad

I love this salad! It is the perfect accompaniment to grilled foods on a hot day, and a great way to incoroporate healthy vegetables & fruits into a meal. I cut down on the onion as others have mentioned or use green onion instead. Be aware that it makes a ton - I'd say the recipe posted makes about 12 servings instead of 8. It is better the next day though, so leftovers aren't really a bad thing.

Greek Penne and Chicken

I changed this recipe from Greek to Italian by substituting marinated fresh mozzarella for the feta, olive oil for the butter, and omitting the lemon juice. Like many of the other reviewers, I used a can of diced tomatoes with basil seasoning. I prefer to cook with whole wheat penne - it's more flavorful & heart-healthy. Also, make sure you use fresh herbs and garlic!! All in all, this is a simple and fresh meal that was enjoyed by all of my guests.
