Linda's Monster Cookies

These are not monster cookies. I would call them oatmeal chocolate chip cookies. And, I'm not impressed. Mine turned out crunchy and blah. I should have stuck with my go to recipe instead of trying something new.

Black Bean Salsa

Love this! When I make it, I can't eat that much. So, I just used a can of each (beans, mexi-corn, and rotel). I used white onion and load it down the cilantro. The cilantro makes it, in my opinion. Makes a great dip but also delicious filler in tacos or burritos.

Too Much Chocolate Cake

AWESOME and SO EASY! My only word of warning: make sure your bundt pan is big enough . . . what a mess I made. :-/ AND, I recommend a drizzle of a ganache of sorts. Melted chocolate and peanut butter mixed together makes an excellent topping.

Baked Kale Chips

YUM! However, a word of caution (and this may be from over baking) but I choked on them and so did my daughter. It got stuck in my airway and I struggled to get it out. My daughter (3) ended up vomiting in an attempt to remove it. But, they taste good! :)

Sugar Cookie Icing

I was very disappointed with this icing. I reviewed the recipe MANY times because I thought I had to have made a mistake with all of the great reviews it got. There is NO way this icing can be used for dipping or painting with 4 teaspoons of "liquid". It was a paste at that point. I had to add much more corn syrup to get the right consistency and it didn't dry "hard and shiny". Looks like I'm going back to searching for a recipe I'll like.

Cocktail Meatballs I

You can't go wrong with chili sauce and grape jelly. These things are awesome! I used pre-made meatballs, which makes it super easy.

Frosting for German Chocolate Cake

Excellent!! I made no changes and love it the way it is! Make sure you cool it enough before putting it on the cake. Last time I made it I was in a hurry and it "oozed" off of the cake. Still amazing, but not as pretty. :)

Pineapple Coconut Zucchini Bread

Great stuff! I was out of sour cream, so left it out of the mix. I only put 1/2 c of oil and added 1/2 c of applesauce instead. Topped the bread with walnuts for some crunch. Excellent!! This recipe made 4 mini-loaves, 4 medium loaves, and 1 large. I used every bread pan I had . . . hope it freezes well! :)

Turkey Bacon Avocado Sandwich

YUM! I had this at a diner in Ouray, Colorado. Their prep was a little different and highly recommended if you're not worried about calories. Grill/fry the turkey in butter first in a skillet. Put the sandwich together, minus the lettuce and grill the whole thing like a grilled cheese sandwich. AMAZING!

Easy Chicken and Rice

This was a hit with my family!! I substituted onion soup mix for the chicken soup mix and the flavor popped. Also, used brown rice which took a little longer to cook but tasted so yummy! Simple and delicious!

Delicious Ham and Potato Soup

Excellent! I left out the ham and added celery and carrots, as well as some cheese sauce at the end. It wouldn't have needed it, but I like a cheesy taste in my potato soup. I'll use this one again!

The recipe seemed too salty to me. I would put at least 1/2 the amount it calls for. Otherwise, a great standard chili soup.

Wedding Cake

One cake turned out better than another. Maybe it was overcooked because it was a little dry. The flavor in both cakes, however, was wonderful! I applied some of the changes suggested in other reviews - adding lemon extract and almond extract instead of the vanilla. Yum! That's a must!
