Corn and Black Bean Salad

We loved this! I add onion and tomatoes if I have them on hand. I make it for a meal for myself sometimes and other times as a side!

Belgian Waffles

I've tried several Belgian Waffle recipes since purchasing my waffle iron. These are by far the BEST I've tried! They crisp up nicely on the outside and have a wonderful texture inside, and the flavor is perfect! These taste as good or better than the ones we get at fests and bazaars here in Germany!

Southwestern Black Bean Stew

Chicken Tortilla Soup I

This soup was a hit! My 12 year old son had two bowls and told me to give it a great rating! I did omit the hominy (didn't have any) and the cilantro (my family doesn't like it). I also seasoned the chicken heavily with fajita seasoning and chili powder while I was cooking it. I used all chicken broth and no water to make it a bit richer and it was perfect! I will make this recipe again and again! It was super easy and super delicious!

Chicken Pot Pie VIII

My whole family loved it -- that says a lot! I want to start by saying YES, make two crusts so as not to waste the extra filling you are bound to have. Also, for the undercooked potato problem, after I sauteed the mushrooms I added a bit of olive oil to the pan and sauteed the potatoes for a few minutes to start the cooking process. I did not have any fresh carrots or celery, so I used frozen veggies. I just threw them in the skillet after I sauteed the potatoes and heated them with the mushrooms and potatoes before adding it all to the yummy gravy! I added some of the stock from boiling the chicken to the gravy to thin it just a bit and simmered it with the veggies a few minutes before putting it in the crust! The only REAL addition I made to the recipe was to throw in some fresh thyme and fresh cracked pepper. I thought it needed just a little something. My other changes were made just because I really wanted the recipe and didn't have the fresh veggies on hand! Great recipe and certainly a "keeper" in my hubby's book!

Monte Cristo Sandwich

I make these without the mayo and mustard and they are still great! I agree with the person who said that deep frying is a regional thing. I had it deep fried once and the greasy thick coating was just too much! For the people who said that something is missing, make sure you are using good quality meats and cheeses and serve with a side of good quality raspberry jam! This is a delight!

Asian Pork Tenderloin

My family LOVES this recipe! My husband raves about it and the man who never has a suggestion as to what to make for dinner actually says "Hey why don't we buy a pork tenderloin so you can do that thing you do with it" meaning this recipe! :o) I Love the recipe just the way it is, however, I could not find chili paste, so I used chili sauce instead! Also, I did use less sesame oil than the recipe calls for as I do not care for an over-powering sesame oil flavor. Otherwise, it is just PERFECT! I serve it with my home made fried rice and everyone is happy!

German Potato Pancakes

This is a great, easy recipe for potato pancakes. My family loves them! I am not sure if the original recipes says this, but once the potatoes are shredded, completely cover them with cold water so that they will not turn brown. Also, drain VERY well before you put the potato shreds into the recipe.

Brown Sugar Meatloaf

Good basic meatloaf recipe...AND...as I read the other reviews I couldn't help but wonder...if you want the brown sugar and ketchup on top why not do as the recipe calls for and flip it over? I am pretty sure that was how it was intended. That way you have a nice carmelized topping.

Cincinnati Chili I

We love Cincinnati Chili, and this recipe is very close to the seasoning packets I used to be able to find in stores. This was an easy recipe, and turned out perfect. I made it for my husband's family who had never heard of Cincinnati Chili and it was real hit! My only advice would be to double the recipe and freeze half!

Firecracker Fried Chicken Drumsticks

I made this for my husband who loves drumsticks and his comment was that he prefers the flour breadding over the corn meal that this one uses. Also, both my husband and son said that it wasn't spicy enough. I only gave 3 stars because with a name like Firecracker Fried Chicken I expected it to have a "pop" and it did not. I don't think it is a bad recipe, just not what we expected and our taste.

Pumpkin Bread IV

This bread has the perfect texture and is so moist. It is an easy recipe too! I took the advice of some other raters and used the whole can of pumpkin. Since this added more moisture I decreased the oil by 1/2 cup and it turned out great. I left two loaves plain, and added some dried cranberries and walnuts and made it into muffins. YUMMY!!! I love that it makes a huge amount too, it saves me having to do the math to double or triple the recipe! Thanks for my new favorite bread recipe.

Easy Iced Coffee

This stuff is the bomb! I love ice coffee drinks, but you never know what is in them when you get them from stores. This is coffee, sugar and milk. I used nutra sweet and soy milk and a little shot of my vanilla coffee mate (for the vanilla flavor I love) and it worked great! Thanks!

Tomato Pork Loin Chops

This recipe was yummy. I served it over basmati rice and my husband loved it! I too left out the fennel (neither one of us like it), and used stewed tomatoes instead of sauce. I seasoned the chops prior to cooking and left everything else exactly as the recipe said. It will be on my new menu rotation! I would like to add that if the pork is tough, it was probably frozen prior to cooking. Freezing meat denatures the protein of the meat and makes it tough. I suggest that for the most tender and flavorful dishes, use fresh meat. This is especially true for steaks, roasts, chicken breasts and chops (solid cuts of meat).

Spanish Rice II

YUM! I was able to throw together this recipe in a pinch. It uses common ingredients that I always have in the pantry -- that is a sign of a recipe I can keep! I didn't have any tomatoes with chilies, so I just used canned tomatoes and a hot pepper from my garden. Turned out fantastic!

Kung Pao Chicken

I love Chinese food, and I have been searching for years for just one recipe that I can make at home that tastes good. This is the one! I did triple the marinade and the sauce (except for the oil and peanuts). I also added an extra can of water chestnuts and I added a can of baby corn. It was great, and I will make it often. YUM!
