Baked Spaghetti

This was great, even though I omitted the butter by mistake and also mixed ALL the cheeses together at once. (subbed ricotta cheese and shredded parm). I was in hurry ... so didn't pay close attention to directions. I topped it with extra mozzarella. I'm concluding this is a fool-proof meal! Will definitely make again. Maybe I'll even follow the directions next time!

Black-Eyed Pea Gumbo

EXCELLENT. I could only find Ranch Style Blackeye Peas (canned) (seasoned w/bacon). I also used Red Gold Fiesta Mexicana Diced Tomatoes (seasoned with lime juice and cilantro). Read reviews, so added Green Giant Mexicorn and also sweet turkey sausage. Oh My Goodness. This was soooooo good. We will not only eat this every New Years Day (with the cornbread, as suggested) but also throughout the winter. I'm sure the original vegetarian version is excellent, too. I'll use that when my daughter visits. I love these kinds of recipes that can be "tweaked" depending on what you have on hand in the kitchen. Thank you Lynn, for such a great recipe! (And for starting off our New Year right! :-)

Mostaccioli with Spinach and Feta

I used canned fire-roasted diced tomatoes and left out the garlic, since the tomatoes were already seasonsed. Whole wheat penne pasta, 1/2 reduced fat feta and 1/2 basil tomato feta. It was DELICIOUS. Great side dish, or might add some cannellini beans for a wonderful main dish for my vegetarian daughter.

Honey Glazed Pork Tenderloin

Marinated for about 3 hours, then cooked at 450 for 15 minutes, covered with foil. THEN pulled back foil and poured marinade over pork tenderloin and basted every 10 minutes. Only took a TOTAL of 25 minutes to cook. (Thermometer read slightly under 160 when I removed pork from oaven) I was cooking a 1.5 lb. pork tenderloin. Let sit for 5-10 minutes in pan with juices, covered with foil. Checked temp again and it read a little over 160. Came out VERY moist and tender. Mild flavor, but VERY good.

This was incredibly easy and quick ... and surprisingly good! The only thing I did differently was to top it with shredded parmesian/asiago/romano cheese.

Chicken Marsala

Excellent recipe! I use 3/4 c. marsala wine and no sherry, 1/2 the butter and oil, and sometimes add a splash of fat free half and half at the end, if I have it on hand. Either way, this ALWAYS turns out great! It's quick and easy, and makes me look like an awesome cook. What more could a person ask for?

Fettuccine Alfredo with Ham

I tried this because of all the great reviews. Sorry, but I didn't like this at all. Fettuccine alfredo goes much much better with chicken than ham. I used leftovers from a delicious spiral ham I had made ... wish I just would have heated up the ham instead. I won't make this one again, but it might just be my taste is different than the other reviewers. It wasn't exactly bad ... just wasn't good.

Easy Sugar Cookies

These are great and I make them all the time. They are only too crispy if you overcook them. If not, very chewy and delicious. I often make them ahead of time and freeze the uncooked dough balls. When we are craving homemade cookies, it's so nice to just pull them out of the freezer, and pop them in the oven. Great, easy recipie. Thank you Stephanie.

Creamy Chicken Lasagna

This recipe was ok, not great. I think I'll try some of the other reviewers suggestions and bake it in a smaller pan and also add some more seasonings, and possibly more sauce. I think once I play around with it, it will be great. Good base.

Sweet Green Bean Bundles

I, too, make this as a casserole. Also, the 2nd time I made it, I halved the brown sugar ... much better. EVERYONE who tries this raves about it. How nice to be able to make this up ahead of time. Simple, yet elegant. Thank you Mark.

Chicken Quesadillas

This one is a keeper. I had the same problem as another reviewer ... crusty edges. Does anyone have any suggestions for that problem? I will still make this one over and over again. Served with sour cream and salsa, it's GREAT for Friday nights or for guests. Thanks for the great recipie!

Chicken Alfredo

This was FANTASTIC. I made it with low-fat cream cheese, skim milk and 'smart balance' buttery spread. It was hard to believe it was low fat since it tasted so creamy. I agree with others that the veggies should be steamed or microwaved first ... mine could have been a little more cooked. Kids don't like broccoli, but if I can just get them to try this, I think they will finally learn to like broccoli. This recipie will become a standard one in my household. Serve with salad and rolls ... a wonderful company dish.
