Easy Indian Style Okra

Fantastic! Really delicious - even my kids loved it. I followed the directions for the most part. Only thing I did different was to substitute cilantro for the coriander. Definite keeper!

Oatmeal Apple Muffins

These are delicious! So good it's almost like dessert! I followed the recipe for the most part, though I did increase to 1/4 cup of oil, shredded the apple, used regular milk w/ vinegar trick and added 1/2 cup diced dried apricots. I reduced the oven temp to 375 degrees. These were very, very good. I highly recommend this recipe!

Pumpkin Spice Muffins

Really LAME!!! I disliked these so much that I didn't even bother to bake the remaining batter after my first batch. I even added chocolate chips and glazed them with honey butter just to make them bearable! These are not even remotely sweet, they really lack flavor, and the nutmeg was overbearing. And we love healthy stuff. I made this with a combo of Kamut/Barley flour, which should have made them even better and just as healthy. Trust me - use a different recipe!

Brown Jug Soup

My family loved this soup! I used frozen spinach and corn, along with canned carrots and green beans, and fresh cut potatoes, celery, and garlic. I also added sliced avacado when I served it. I was delicious! My four kids gobbled it up, even the one who "hates cheese". This recipe is a keeper!

Pork Lo Mein

We really liked this recipe. It was my first try at Chinese cooking, and I was so pleased. I am big and pregnant, so I took the lazy way out and used garlic powder and powdered ginger - was still great! Definetly recommend this recipe!

Southern Potato Salad

Sausage Mushroom Manicotti

Next-Best-Thing-To-Robert-Redford Pie

This was a real surprise. I was leary because I'm not big on pudding, but the combination of all the ingredients really made a fantastic dessert. I used pecans instead of walnuts and there wasn't a slice left! Easy and delicious!

Beth's Spicy Oatmeal Raisin Cookies

These were delicious! I made a couple changes to make them a little healthier and my family never knew the difference. Instead of white flour I used soft white wheat and instead of plain oatmeal I used a 7-grain mix that has oatmeal, flaked rye, barley, etc. This blend is heavier so I reduced the oats to 2 cups. The cookies were fantastic. Highly recommend them!

We loved this - even my three young kids. I made a few changes because I didn't have all the ingredients: instead of sausage I used small pieces of pork, instead of tomato sauce I used a can of condensed tomato soup with a couple TBS of ketchup, and instead of processed cheese I used a blend of monterry jack and cheddar. It was easy and delicious. This is definetly a keeper!

Salad Dressing Cupcakes

These were a great surprise. The ingredients sounded kind of crazy to me, but I really enjoyed these cupcakes. I used plain mayo as my salad dressing and whole wheat flour instead of white. The cupcakes had a great texture and weren't dense at all. I topped them with cream cheese frosting. Yum!

Asparagus Beef Stir-Fry

Very good! I simmered the mixture all together for about 15 extra minutes because I like my asparagus tender and soft. Even my 7 year old liked it! Will definetly make again.
