Scotch Scones

Reviewed: Feb. 9, 2014
Delicious!Only complaint is they were a bit sweet so I scaled back the sugar to about half... I also simply rolled each piece of dough into a ball about the size of a small ping pong ball and placed them onto the griddle where I smashed them down with a spatula and cooked on one side and then flipped them. Good with milk or anything!

Salmon Cakes II

Reviewed: Apr. 1, 2009
Delicious! I substituted tuna for the salmon, but followed the recipe to the letter otherwise. I used my own sourdough breadcrumbs, which made the cakes a bit soft but good. Sauced with a sweet pickle remalaude sauce, the dish was kickin! Hint, add an egg to the recipe if using fresh bread crumbs...

Butter Cookies II

Reviewed: Dec. 13, 2008
Quick! Easy to throw together and roll out in a pinch like I did today. Next time I'd add a 1/2 tsp. salt, the cookies were a bit bland, but good... Chef Marian Thompson

EASY, TASTY, QUICK! Only thing I changed was the all purpose flour to cake flour. I bet it's even good with the all purpose flour too, lol but I'm a cake purist... Chef Marian Thompson

Beer Battered Chicken

Reviewed: Jun. 30, 2006
Easy recipe! Good results, used old bay and Honey in the batter. Use a strong beer, light beer leaves no flavor. We used this recipe for catfish, excellent!!! Chef Marian Thompson

Whole Wheat Bread III

Reviewed: Nov. 23, 2004
Bread was low rising, which I expected, it lacked flavor and had a crumbly texture. The recipe would probably work better with 1 1/4 tsp of salt, this will yield a slightly higher rise in the loaf (if you use the original recipe) as too much salt will kill the yeast. Adding 2 C. Whole Wheat flour and 1 cup white bread instead of the 3 Cups Whole Wheat flour will definately yeild a better loaf with less crumbling. 4 Tb of cornmeal was plenty for me. Adding the ingredients from the bottom of the recipe to top will also help keep the salt from direct contact with the yeast.

Fresh Apple Cake

Reviewed: Sep. 30, 2001
Awesome apple cake recipe! Be ready for a rich apple cake here, maybe decrease the vegetable oil to 1 1/4 C. but otherwise a melt in your mouth, moist, richly flavored traditional apple cake that you can take anywhere and people will be licking the plate for the crumbs! Best Brownies

Reviewed: Sep. 30, 2001
Excellent brownie recipe! The only thing I changed is I added 1 jar of baby food applesauce (or baby food prunes or pears) and decreased the butter to 1/4 c. I made these, let them cool and they were gone in less than 10 mins, eaten by my family of 4 before I even got a chance to frost them! If you make these double or triple the recipe!
