Spinach Lentil Soup

I thought this was just okay; a little too bland for me. I even added fresh garlic, salt, black pepper and saffron. I think it could have used more carrots and rice, too. If I make it again I will definitely add more flavor and use all vegetable or chicken stock instead of water.

Eggplant Parmesan II

I followed recipe exactly. It had great flavor and was easy but eggplant wasn't cooked nearly long enough. I would suggest taking the extra time to "sweat" the eggplant too.

Basil, Tomato and Mozzarella Sandwich

There are so many options for this sandwich but my favorite is to use a loaf of french bread & slice it to the desired length for your sandwich. Next, tear out the middle of the bread (the soft part), sprinkle shredded mozzarella cheese, chopped tomatoes and chopped basil on one side. Then, sprinkle red pepper flakes on the sandwich. Close the sandwich and press together. Finally, heat in a pan on the stove to warm the inside and make the bread crusty. Delicious.

Chicken Cordon Bleu II

This dish was awesome. I have made other Cordon Bleu's before that were okay but this is by far the best. I did make a few changes though. I spread dijon mustard on the chicken with the swiss cheese and I used prosciutto instead of regular ham. I also sprinkled parsley and black pepper in with the flour and paprika. I sauteed it on the stove top in olive oil and baked it for the last 20 minutes. When the chicken was done baking, I put the chicken on a plate and made the gravy in the pan on the stove top. Absolutely delicious!

Golden Sweet Cornbread

This is a wonderful recipe for sweet cornbread. It definitely needs more liquid to hold it together. I used egg whites and, instead of just milk, used 1/2 cup of half and half and 1/2 cup full fat milk. Vanilla is a must with this recipe.

Broiled Tilapia Parmesan

This recipe was okay. I used fresh parmesan and didn't cut down on the amount so the parmesan was a little overpowering. The fish was nice and moist, though. I took some to my neighbor and she said she loved it so much that she inhaled it.

Sesame Chicken

This recipe was excellent and very easy to cook> My husband said it was restaurant quaility & had great flavor. I marinated the chicken overnight and we put honey in it & it was even better! Even my picky 4-year-old loved it & asked for seconds. Thanks for a great recipe - I'm definitely making this again.
