Irish Soda Bread

Gourmet Mushroom Risotto

Excellent recipe. This was my first time making risotto and it was much easier than I anticipated. I ate two servings yesterday and this morning I brought some to work and I am eating it already (its only 10 am!!) – this is how good it is. My husband loved it too. I made my own chicken broth with fresh vegetables and chicken. I used 1 full cup of wine, baby Bella and white mushrooms and it wasn’t too much. At the end I also added cut-up chicken from the broth and some green peas, which was very tasty. And of course I used freshly grated Parmesan cheese. Making my own broth allowed me to control the salt and the end result was scrumptious!! Will definitely make it again – maybe with some tomatoes or garlic and shrimp next time.

Egg Salad Sandwiches

This was a very good salad. I used freshly chopped onion, regular yellow mustand and fresh dill instead and served it on a sandwich bun with butter lettuce and a slice of tomatoe. Very good. I though 1 cup of mayo would be too much but it was perfect.

Prosciutto Wrapped Asparagus

I saw these at my friend's party and they were very tasty. She didn't bake them. She pre-cooked the asparagus for 1 or 2 minutes and wrapped the prosciutto over few stems of asparagus and some cream cheese. She tied it with a chive. Very nice presentation and a great tasting appetizer. I made it few times myself.

Stuffed Cabbage Rolls

Definitely use suggestions from previous reviews and you will love this dish. This is the basic recipe I follow every time I make stuffed cabbage rolls. I always double the sauce. They come out just like my grandma use to make them back in Poland.

World's Best Lasagna

This lasagna is great and the sauce itself is awesome too. My husband told me that this sauce is better that the one I usually make and that one was from his mother’s recipe. This recipe makes a little more sauce that you need so I use the leftover for some pasta or ravioli few days later. I followed some suggestions from the previous reviews and from making this recipe few times here are some things I changed. *Used 1lb each of beef and Italian sausage *Used less salt (only about a teaspoon) *Used only 1 tablespoon of sugar in the sauce *Used wine instead of water *Used fresh chopped basil instead of dry (about ½ cup) *Used “ready to bake” lasagna noodles *Used fresh deli grade ricotta cheese not the processed stuff from the container *Used freshly grated Parmesan cheese This is a 5 start lasagna recipe that it better than the one you order in the restaurant!! I often add spinach (fresh spinach wilted with some butter) to the ricotta cheese and it tastes great. Remember to always use as much fresh ingredients as you can – you will taste the difference (fresh ricotta and Parmesan, add fresh parsley and basil etc) Enjoy! Also, make the sauce a day earlier to save time.

Baked Corn

I made this corn bake once and I think I will go back to my old recipe with cream cheese and no butter instead. Its much better and creamier. Instead of butter and sour cream I use 4oz cream cheese and 3/4 cup of milk. I also add one additional egg. I use this recipe for years at Thanksgiving and everyone always loves it.

Tiramisu II

This is THE recipe for Tiramisu. I have tried many recipes and this one is by far the best. Follow the suggestions from previous reviewers and this will turn out magical. I served this last at my Christmas party and it was a hit for a crowd. It was all gone in minutes. Make sure you make it early in advance (day or ever 2), beat consistently while making the egg mixture and double the coffee. Enjoy!

Chocolate-Covered Cherry Cookies

Alfredo Sauce

I made this sauce few times already and its is very easy and tasty. There is no reason to buy Alfredo sauce in a jar if you can make it your own. ***Make sure you always use the fresh Parmesan cheese that you grate yourself, the other stuff will not melt and you will have grainy sauce*** I also add sliced portabello mushrooms or chicken to the sauce to make it chunkier.

Eggplant Tomato Bake

I made this appetizer instead of dinner yesterday. It turned out very tasty and looked great with few alterations. I took the eggplant skin off (just my preference) and lightly brushed each circle with olive oil. I added seasoning (salt, pepper and basil) in between the eggplant and tomato and tomato and cheese. I used some mozzarella and some Parmesan cheese since this is what I had on hand. I baked it covered at 400 degrees for about 35 minutes and then uncovered for about additional 15 to make the eggplant soft which is the way I like it.

Easy Vodka Sauce

I love this sauce. I already made it several times and here are my changes that make the sauce perfect. I add pachetta with the onion and brown it before adding the tomatoes. I also add Italian seasoning with tomoatoes and fresh basil after the sauce is done cooking. DELISH!

Italian Breaded Pork Chops

Downeast Maine Pumpkin Bread

DELICIOUS! I loved this bread. It was very moist and tasty. Definitely my favorite bread which I will make again. The only change I made it substituting half of the oil for applesauce to make it less fatty. A must try!

Jam Kolaches

I made those for Christmas and they came out great. I used Solo canned fruit jam to fill them so the jam doesn't bake or drip out. This is definitely the way to go. My sister added some sugar to the dough because she likes the dough a little sweeter but I keep it as is since the jam adds all the necesary sugar for me.

Anniversary Chicken I

I really like this recipe. It is a very rich chicken dish with all that cheese, so make sure you have some light rice on the side not to overdo the whole dinner. All in all the taste was very good but I overcooked it a little since my chicken breasts were on a small side and even 25 minutes made them dry. As previous reviews say - add the cheese in the last 10-15 minutes and try using fresh bacon instead of bacon bits. My bacon bits were very salty.

Simple Garlic and Basil Pesto

This is a good pesto recipe. I modified it a little adding only pine nuts and not adding all that oil. I like my pesto to be more of a paste consistency. Sometimes I add a fresh tomato to substitute for part of the oil. I also added some black pepper and I always skip the chili powder.

Best Big, Fat, Chewy Chocolate Chip Cookie

I thought these were great cookies and they were definitely chewy. As much as love sweets I thought they were just a little too sweet for my taste but I will definitely make them again. TIP - make sure to form big cookies (use 1/4 cup for each cookie) - this way they will be chewy and will not over bake.

Maple Salmon

I love this recipe. I made this salmon several times in the last few months and my husband always requests it. Sometimes I use a sweet Asian glaze instead of maple sauce and it always turns out great. I make wild rice and broccoli as a side. I made this dish when having family and friends over for dinner and everyone loved it. I know I am not suppose to marinate the fish for long but I alway leave it in the sauce for few hours just to make sure the sweetness gets into the salmon. YUM
