Crispy Mashed Potato Pancake

Reviewed: Apr. 30, 2008
wow this is a great recipe i tried it for my boys as a afterschool snack and they loved it and so did i it was quick easy and delicious i made a couple changes such as adding parmesan cheese and a half cup of flour and 2 eggs instead of 1 i added garlic salt and let it rest for 10 minutes the on medium high cooked them in oil they turned out fabulous and crispy on both sides and did not have the slightest inkling they would break apart the key is adding the flour hope everyone loves the recipe as much as i do
