Mediterranean Puff Pastry Chicken

Wow, I made this for dinner tonight and it came out perfect It's true as others said, you only need half the pastry the recipe calls for ... and I chose not to soak the chicken in garlic and egg (which really didn't matter) instead I mashed some crushed garlic into the Feta cheese, pounded the chicken breast flat covered the chicken with the cheese and then rolled it together and placed it on top of the spinach, then topped it with the basil pesto and dried tomatoes - the chicken came out tender and it was absolutely delicious! My husband just loved it!

Spicy Chicken and Sweet Potato Stew

This is a wonderful easy and delicious recipe! The only small change I made was - instead of 2 cups of water, I used 2 cups of chicken broth. I will definitely make this again!

Chicken Scampi II

Very good! I carefully read through a great amount of reviews and followed some good suggestions - 1/2 the butter in the recipe, use only 2 Tlbs. of Olive oil, more garlic (I used 4 big cloves), added 1/2 cup of white wine, 1 diced tomato for color, added a small red chili pepper chopped fine and last but not least topped it with fresh grated parmasan cheese. It came out perfect!

Thai Burgers

I am crazy about this recipe! So delicious! I did add an egg to the recipe (I thought it needed it bind the ingedients together) and made meatballs instead of burgers. Served with jasmine rice and satay sauce ... it's a dream!

Orange and Lentil Soup

My Husband and I just loved this soup! One of the best I ever ate, with a wonderful fine flavor! I followed the recipe exactly as written but did add some diced cooked chicken to it. I served it with fresh backed Corn Bread - absolutely Yummy!

Curried Leek Soup

Thank you Arnold for this wonderful recipe! My husband and I both loved it. We like our food on the hot/spicy side so I did use a nice spicy curry and added a small red chili pepper - I could imagine also adding some potatoes and chicken pieces to this recipe as well - but not because it was missing something - just for a change. I will be cooking this soup often - it's a keeper!

Stuffed Cabbage Rolls

This was a BIG HIT hit in my house! I used ground beef and ground pork, plus added a finely chopped red chili pepper and fresh chopped basil. Other than that I followed the recipe as written. It was absolutely delicious and easy to prepare. (I wilted the cabbage leaves in the microwave as suggested by another reviewer - it was fast and worked out perfect)!

Beer and Maple Lentil Stew

We are lentil lovers in our house so I was looking forward to trying this soup with a twist. It really was very good and a good alternative to a classic German Lentil soup. The 4 star rating is because, the beer I used was a bit too bitter and the next time I will choose another brand. I also suggest to cook up a bit more bacon so you have some to crumble on top when serving. I served it with homemade cornbread which really complimented it well. This is a soup that will help us get through the cold winter!

Cranberry Couscous Salad

Very boring, sorry. I love couscous, but I felt it was just too bland and just a waste of good ingredients. I was so unhappy with it that I wouldn't even try to add something to make it better.
