I absolutely HATE the idea of taking a vegetable and then adding bread and cheese, and frying it. It absolutely negates the whole nutritional value of the veggie in the first place. HOWEVER, I hate eggplant even more :-). So I tried this because I had an eggplant that husband wanted me to buy. Not bad at all. I will probably add more seasoning the next time I make it, but I will make it again. My sons even ate it. I am absolutely amazed. I did find it hard to strike a balance between oil temp and burning the breadcrumbs though because I never fry anything so I am not that good at it. I think I might try to bake the next time. Anyway, nice recipe. Thanks.
