Cucumber-Cilantro Raita (Yogurt)
Cool and refreshing. Use Greek yogurt and the raita won't become runny. I added a chopped tomato (after removing the seeds) and a little minced onion in place of the chile pepper

Baked Ziti I
Halved the recipe to serve 4 people (there were still leftovers) and made it meatless. Good basic recipe that can easily be altered to suit your family's preferences. Using a good quality sauce is a must! I took others' suggegtions and layered it pasta, sauce, cheese, pasta sauce cheese. Covered with foil for the first 20 min, and it wasn't dry at all.

Lucky's Quickie Chickie
Easy weeknight meal, served with store bought refrigerated mashed potatoes and salad. I doubled the sauce so we could drizzle some on our potatoes. Used more honey and less balsamic instead of the 50/50 ratio, because I knew my kids would prefer it a little sweeter. It still had a lot of balsamic flavor and they gobbled it up. Fresh basil is a must! Next time I might use stir fry strips instead of tenderloins, which would cut the cooking time. Thanks for sharing :)
