Creme Brulee French Toast

Excellent! I didn't have corn syrup so I just used some "pancake syrup" that I had in the cabinet. I also used two teaspoons of Grand Marnier because I just wanted to. It turned out great!

Salmon 'Tartare' Spread

It was meh and salty. I used it with BBQ Kettle chips. I highly recommend making this earlier enough to give the flavors time to meld. It was definately better the next day.

Salmon with Creamy Dill Sauce

The dill sauce is what made me go mmm for this dish. I didn't have lemon slices or lemon pepper seasoning so I used lemon juice and Old Bay seasoning. It still turned out great.

Gerry's Chicken Enchiladas

This recipe was delicious. I only changed some things like using olive oil and wheat flour tortillas. I cooked some instant spanish rice before rolling the enchiladas and putting them in the oven.

Sunshine Chicken

Good quick recipe. I soaked the chicken in water and salt first. I used honey instead of corn syrup and crushed garlic instead of powder. I didn't baste because I didn't read ahead. I put a little bit of sauce in a casserole dish, salt and pepper on the chicken, and poured the rest of the sauce on top of the chicken. I put it under the broiler for about 10 minutes to get the skin crispy and then baked it in the oven.

Brown Sugar Meatloaf

I didn't have enough ketchup so I used some store brand BBQ sauce I had lying around. I also used onion soup mix out of laziness and omitted the egg out of forgetfulness. I shape my meatloafs on a double pan so the grease can drain and glaze the top. It turned out really nice

Broccoli Chicken Divan

Reading the reviews, I seasoned 2 chicken breasts with seasoned salt, garlic powder, and lemon pepper. I sauteed some frozen chopped onions (not sure how much). Then I placed the seasoned chicken on top the onions and put a lid on it. I used cream of broccoli soup, mild cheddar cheese, and mayo for the mixture. I layered the ingredients as suggested and top with cheese and buttered panko crumbs and cooked in the oven for 15 minutes. Delicious. Next time I will try lemon juice and pepper.

Golden Rum Cake

Excellent. I took the advice of poking holes in the cake for it to absorb the glaze. I also added 1/4 cup of Myers rum instead of 1/2 cup while it was still on the heat to burn off some of the alcohol taste. One thing I will probably do differently is leave enough glaze to drizzle on top after the cake has absorb the initial batch. I like a light flaky glaze on my rum cake
