Garlic Roasted Chicken and Potatoes

This is the first chicken and roasted potato recipe I've made and was very pleased with it. Next time, I will try peeling and cutting the garlic into large slices, since it was messy to squeeze out the roasted garlic.

My mom made this a lot, too. But, we saute onions and peppers first, removed from the pan, did the meat, and then added it all together. Put the gravy over rice. Great comfort meal.

Chicken Chipulos

Pretty good with some doctoring: I only used one can of soup, otherwise it's too "soupy." I used more tortillas, added frozen broc/corn/red pepper mix, and cumin or a little crushed red pepper.

Beef Florentine

We loved it. I used whole wheat noodles; it made a nice, light alternative to lasagna. I did put the mozz in the middle layer as well.

Mushroom Sauce Baked Pork Chops

The sour cream and carmelizing the onions with the pork chops gives a good flavor. I also used pepper, sage, parsley, garlic and onion powder. This was the best variation of this old stand-by that I've tried and it's a keeper. Thanks for sharing it.

Italian Style Pot Roast

Definitely a make-again. Slicing up the cooked meat and returning it to the pot is key. I served it with mashed potatoes and veggies instead of noodles.

Italian One Step Casserole

We liked this the first time. The second time, I browned the sausage a bit and sliced it before putting into the recipe and used stewed tomatoes. Also, did a mix of sweet and hot sausage.

I used cut-up breakfast sausage patties and mozzarella cheese, with more cheese on top. You can use different variations depending on the ingredients. Would make again.

Tater Tot Casserole III

I was skeptical, but wanted something one-dish and different. It came out pretty good! I used the low sodium cream of mushroom soup as the only liquid and thawed frozen green beans and a small can of mushrooms. My husband liked it, and I will make it again one day!

Grilled Cheese Sandwich

My mom always added a slice of tomato and a sprinkle of oregano inside. Rye bread or Portugese bread are good, too. And, two slices of cheese are a must!
