Baked Kale Chips

Reviewed: May 17, 2015
My first attempt at kale chips. Super easy, and my carnivorous husband is sitting here eating them with me! Great way to roast. Already thinking of what variety I can add to my next batch! even though they are delicious as written. Thanks Lucy!

Cabbage Fat-Burning Soup

Reviewed: Mar. 1, 2015
I'd have given this a 4 as written, it's really good, but a little bland. After adding S&P, garlic, bay leaf, and some dried herbs, it's delicious. I'm in the south, so of course I added okra since there's alot of tomato in it. I used the low sodium V8 after reading other reviews that the tomato juice was a little overwhelming. The only thing I changed to add to the caloric content was some ground turkey for protein, making it a meal my husband will eat too. Will make this again for sure, delicious!!

Quick Chicken Piccata

Reviewed: Feb. 17, 2015
This was SO DELICIOUS and I made it without any mistakes! A milestone for me! My only change was to add a clove of minced garlic with the capers as some others did, because I love garlic. I was soo impressed with myself! I will DEFINITELY be making this again.

The Best Lemon Vinaigrette

Reviewed: Feb. 8, 2015
Just made this and it's great, but I added a little more lemon, without thinking it will probably become more flavorful after a few hours of melding. Oh well. I love lemon!

Slow Cooker Lemon Garlic Chicken II

Reviewed: Jan. 6, 2015
Super easy dish with alot of flavor. The only reason for 4 stars instead of 5, is because its alot of oregano flavor for me, and I actually cut it in half and added rosemary. I did add more broth and lemon as others suggested. Thickened the juices for a great sauce over our roasted new potatoes. Will make this again!

Slow Cooker Beef Stew by McCormick®

Reviewed: Nov. 3, 2014
I made this just as stated except for adding some garlic salt and pepper. It still could have used a little more seasoning, but other than that, it was tender and had a nice base, not too thin. It was so easy, I will definitely make again.

Kiki's Borracho (Drunken) Beans

Reviewed: Nov. 1, 2014
The only reason I'm not giving this 5 stars is because I felt like it had too much oregano. The flavor of everything else is great, but overwhelmed by it. I will definitely make these again, but cut back to maybe half the oregano called for. I used a Sweetwater 420 beer which is a medium stout and had no beer aftertaste.

Yummy Lemon Salmon Burgers

Reviewed: Mar. 10, 2014
I thought this was good, but only 4 stars because it was just a little bland. I added a Tbsp. of dijon mustard and some garlic salt before cooking. I'll definitely make this again and add a few more seasonings. I also added a bit of ketchup to the sauce and it tasted great.

Saltine Toffee Cookies

Reviewed: Dec. 23, 2013
I've made this recipe twice now. My sister made this years ago and I had forgotten it existed. Glad I came across the recipe. I topped it with some toffee chips along with the nuts in the final step for extra crunch and toffee. I'm leaving some for the mailman in the morning for Christmas!

Balsamic Chicken and Fresh Mozzarella

Reviewed: Dec. 15, 2013
Wow! This tasted amazing to me, and so easy! I love balsamic and this had great flavor. I agree with reviewer "realvintagegirl". DO NOT heat this after adding the mozzarella, tomato, and basil. The cold ensalade on top was perfect with the warm marinated chicken. My only change was adding a bit of minced garlic to the chicken the last few minutes of cooking so it wouldn't overcook and be bitter. Perfect for summer entertaining, but I'll be eating this year-round! This is a new fav!

Easy Mexican Casserole

Reviewed: Dec. 14, 2013
This was good but not real flavorful. I added garlic, cumin, chili powder, and cayenne to the ground beef, and added some chopped fresh cilantro along with the olives, onion, and tomatoes. After reading a few reviews, I will make this again and use black beans in place of chili beans, and add taco seasoning and a little chorizo. I also plan to cut the salsa in half and sub enchilada sauce for the other half. The tomato taste of the salsa was a little strong. Looking forward to trying it with these few changes.

Mushroom Pork Chops

Reviewed: Dec. 13, 2013
This had a really good flavor, It was just a little bland. I used portabella mushrooms and it still could use a little something. The chops were very tender and moist. I will make this again, but will probably try adding a little worcestershire sauce and maybe some minced garlic or the golden mushroom soup that was suggested by some reviewers. It was also very quick and easy!

Balsamic Roasted Pork Loin

Reviewed: Nov. 18, 2013
Super easy! This was really good. My husband loved it, and he just started liking balsalmic vinegar. I agree it was really good, the only change I made was adding some minced garlic to the marinade. I read more reviews while it was cooking and saw some cooks added honey. I think I will do this next time, so there is a bit of a sweet finish to go with the sour.

Healthier Stuffed Peppers

Reviewed: Nov. 4, 2013
If it were up to my husband, this would get 5 stars. He loved the fact that the sauce was thick on top similar to meatloaf but a prefer a lighter sauce. I too, added extra sauce for the top and I used poblano peppers. The meat mixture was a little bland to taste, so I added extra garlic. It is a good recipe and I think I will make it again with poblanos and mexican spices.

Okra with Tomatoes

Reviewed: Oct. 4, 2013
Good recipe. I took advice of others and cut the cayenne in half and it still had plenty of heat. I added a little extra garlic after tasting it halfway through cooking and it added a little more flavor. I couldn't get an 8oz can of diced tomatoes, so I used a 14.5oz size. The few extra tomatoes can't hurt! Will make this again!

Spicy Rapid Roast Chicken

Reviewed: Oct. 3, 2013
Although I didn't use the exact spice ingredients listed, (I used what I prefer, which was easy to sub) this cooking method made the absolute moistest roasted chicken I have ever made. I will definitely be making this again and using different variations of spices. I'm curious to try a five spice version!

Cheesy Ham and Hash Brown Casserole

Reviewed: Oct. 3, 2013
I made this to serve when my siblings were over for breakfast. My only change was to top with more cheddar instead of parmesan due to some other reviews. I think next time, I will add some cayenne and some chopped green chilies just to give it some heat. Very good to eat the leftovers late that night!

Beer Lime Grilled Chicken

Reviewed: Oct. 3, 2013
The flavors in this dish sounded great, but actually was bland. I will probably try it again, but will definitely pump up the lime, garlic, and honey, and use a darker more flavorful beer rather than a light beer.

Ex-Girlfriend's Mom's Salsa Fresca (Pico de Gallo)

Reviewed: Oct. 3, 2013
This is my new go to recipe for Pico de Gallo. I followed the recipe and only added some extra jalepeno, which I discovered wasn't really necessary. Marinating the onion and jalepeno in the lime juice first really brings out the flavor. We even top broiled whitefish with this!
