Meyer Lemon Pie

I used the juice from regular lemons and one tangerine,to make it like Meyers lemons, since I could not get them. Not sure what happened, but the filling was so thin (like water) that when I poured it into the pie shell, the pastry must have absorbed the liquid. After cooking and setting, the pie was about 1/2 inch deep. The crust was soggy and stuck to the pie pan. I gave it three stars, because despite how horrible it looked, the taste of the filling was delicious. Will have to figure out something else to make with the filling.

Glazed Carrots

I have always made glazed carrots the traditional way. Cooking raw carrots in butter and sugar until the carrots were done and the sugar/butter carmelized. But you always had to watch so carefully at the end because the sugar could burn from one minute to the next.... This was so much easier, and they tasted just as good. Thank you

Cottage Cheese Roast

I made this recipe as stated the first several times, and rated it on the original recipe. I loved it. Meatloaf is one of the foods I missed when I became a vegetarian. I was hesitant to try it the first time since the ingredients are so strange, but I am glad I did. I have made some changes with the recipe in order to cut down on the sodium level. I use low sodium cottage cheese, and use only 1/2 envelope of onion soup mix, and then add more dried onions. I add chopped cooked mushrooms also, mainly because I love mushrooms and used to put them in my "meat" meatloaf. Makes great sandwiches the next day.

Traditional Style Vegan Shepherd's Pie

Since I don't eat meat,I almost didn't open the "Thanksgiving" email from Allrecipes,but am I glad I did. This recipe is so good. I would have never thought to attempt a shepards pie without meat. I made it vegetarian,not vegan, skipped the cream cheese,because I forgot to buy it and added mushrooms,because I love them, but the kept everything else the same. It is a great cold weather comfort food. I also like it because you can add or change the vegetables to suit your taste or what happens to be on hand. thanks!

Veggie Vegetarian Chili

I thought this chili was awesome. It is a very versatile recipe, allowing for substitutions based on preferences or what you have on hand. My daughter and I are vegetarians, and on weight watchers, and this is a great meal that is low in points and very filling. I eliminated the carrots and substituted an extra can of black beans for the pinto beans, just because I really don't like carrots or pinto beans. I am going to try freezing some of the next batch. Thanks for a great recipe

Baked French Toast

thought this recipe was awesome. My grandson says it's the best french toast he ever had (high praise from him) I have made it several times and it has always come out perfect. The only thing I changes was that I used maple syrup instead of corn syrup.
