Cilantro Chicken and Rice

Reviewed: Aug. 28, 2008
Yum Yum! A few minor changes. I took the advice of another reviewer and mixed in a packet of taco seasoning with the (wheat)flour for flavor. I used onion powder instead of onion (hubby prefers), zatarains yellow rice (box, it was all i could find), I omitted the tomatoes (sis prefers), only used the pinto beans (and did not drain, to add more liquid for the rice), used a 'bunch' of cilantro, and cumin and chili powder instead of the cayenne. When it was all done I sprinkled some mexican cheese on top, it looked so pretty! i took a picture, i will upload soon. Hubby requested black beans next time, he said it would go better with the meal and sis said maybe some tortilla strips or crumbles would be nice on top so i will try that next time. My three year old ate two servings!

Best Ever Banana Bread

Reviewed: Aug. 26, 2008
Ridiculously delicious!! I modified this but it came out spectacular so i had to share. I did not have buttermilk so i used 1/3 c. of sour cream, substituted 1/2 c. of applesauce instead of the veg oil, used three bananas (they were brown and needed a plan fast!!), I used 1 c. of brown sugar instead of 1.5 c. of white, and whole wheat flour instead of white flour (and i did use the pecans). I greased my pan and sprinkled it w/ brown sugar then poured in the mix and sprinkled the top with a blend of brown sugar, the rest of the chopped pecans and a bit of cinammon. So moist! I even noticed a couple of pieces disappeared in the middle of the night...someone couldnt get enough! Yum Yum!

Beans and Rice

Reviewed: Apr. 14, 2007
I loved it! My husband doesn't love onions so i used onion powder instead. I also put cheese on top. I liked it better mixed together than just on top of the rice. Even my two year old loved it. Will definitely make again
