I'm not a big fish eater, but the wife & kids are, so as the cook in the family I make at least one fish recipe a week. This is probably THE only way I actually ENJOY eating the fish! I make the topping as stated, but add a little extra Parmigiano-Reggiano on top of mine (I'm a huge parm fan)

Eggs and Spaghetti

I've done this a few times (great minds & thin wallets think alike LOL) sometimes with a few slices of cooked bacon finely chopped & fresh Parm grated on it as a "one-man pasta carbonara". To hose who think it sounds unappetizing, please try before you judge, You wont regret it! Yolk makes such a lovely sauce :)

Roasted Tomatoes with Garlic

Made with no mods (other than a touch heavy on the garlic). Tastes fantastic, and brings me back to my grandmothers house :)

Cowboy Hash

This was surprisingly good! I made it with the cornbread as recommended, and I also put in 4 strips of finely chopped bacon. Definitely a keeper!

Baked Ziti I

This was a winner! ooey-gooey cheesy good :) Kids loved it, wife liked it, dads a hero again LOL I followed the tips on layering some sauce first, and true to grams heritege, used ricotta/egg instead of the sour cream as well.

Onion and Cheddar Burgers

I had a problem with the patties falling apart, but it was home-ground deer meat that was on the lean side, so I take the blame for that. It was a little onion-heavy, but the onions I have ran on the large side, so no hits for that either. Overall it is a good recipe that I will be using again. :)

Recipe as is tasted fantastic! My second batch I added 1/2 Tb red pepper flake and 1/2 tsp cocoa-chili powder...it has been a HUGE hit!

Beer Batter Fish Made Great

Very good recipe! I followed it to the "t", had no problems with the flavor (not to salty...I actually added salt right after frying) or the crunch (use the paper bag, it works)...I use only kosher salt though, so maybe that is the trick.
