Easy Pineapple Cake

I made this cake exactly as directed but baked it in a bundt pan for a friend's birthday. She and her husband said it was the best cake they have ever eaten. The cake is very dense but lovely. I made my frosting with whipped cream cheese, powdered sugar, pineapple juice, and unsweetened coconut. Then I sprinkled more coconut on top and placed little pieces of pineapple. Amazing!!

Apple Spice Cake

I recently made this cake for a dear friend's birthday. It was fantastic! I did chop the apples so they were small (like a grated carrot). I also used just over a tablespoon of cinnamon and 2 teaspoons of nutmeg and I used 1 cup white sugar and 1 cup brown sugar. I sprinkled the cake with powdered sugar. It was beautiful and yummy!

Iced Pumpkin Cookies

This recipe is really, really amazing but I altered it a bit to suit my family's tastes. Knowing we are a spicy family, I doubled the cinnamon, cloves, and used fresh nutmeg (but didn't measure it). I also added a little bit of allspice... maybe 1/2 teaspoon. I was planning to put a cream cheese frosting on the cookies but my kids ate them warm right out of the oven and I never had time to even make the icing. :) Lovely recipe! Thank you so much!!

Megan's Granola

This recipe is so fantastic and quite versatile! I changed it up just a little... didn't add walnuts because I was out, added ground flax for more nutrients, used pumpkin and sunflower seeds, used agave (3/4c) instead of maple syrup and honey, and added about 1/2T more of cinnamon. I think the recipe could have been made exactly as written and would have been excellent still. I only tweaked based on what I had in the house and on personal preference. Thinking I will try to add peanut butter next time, cut out the cinnamon, and add chocolate chips. There are so many ways to make this! Be creative!!

Burger or Hot Dog Buns

I just pulled these out of the oven a few minutes ago and they are AMAZING! I make bread often and couldn't just throw the yeast in so here is what I did... melted the butter and milk together. Proofed the yeast in the warm water, then added the sugar to that. Mixed 2 cups of flour with the salt. I added the milk/ butter mixture to the flour/ salt and mixed with my dough hook on my mixer. Then I added the water/ yeast/ sugar mixture and mixed with the mixer again. I added 2 more cups of flour and the egg to everything and let it run in the mixer until well blended. I added another 1/2 to 1 cup of flour... just watching until it was the correct consistency. I then put the bowl on the stove, covered it with a towel and let it rest for about 2 hours. I came back to the dough, rolled it into balls and put it on the cookie sheet (only made 10). I again covered with a towel and let rest for about 1 hour. Then I baked them! They came out soft and fluffy. Perfect for the sandwiches we are having for dinner! I will NEVER buy buns again! Thanks for the fabulous recipe!!

Buttermilk Pancakes II

My husband made these this morning and they were fantastic!! The best pancakes I have ever eaten. He altered it only slightly... he used 2 cups of buttermilk from the store and he made the last cup with milk and vinegar (he ran out of buttermilk). He also added a few drops of vanilla to the batter. Lastly he added the sugar to the wet ingredients instead of the dry. Simply fabulous! We have a family of 7 and there were leftovers. We love it though! We just freeze them and pop them in the toaster during the week for a fast breakfast. Thanks for the great recipe!

Simple White Cake

This recipe was more than I hoped for! It was short enough and simple enough that my 5 year old and I completed it while dinner was baking. It baked while we ate. And it tasted so good. He was very proud of himself as his sisters and brothers raved. The cupcakes do taste, as other viewers have noted, like a sugar cookie. Ours were dense like a pound cake but silky smooth. Fantastic even with no frosting! My only change to the recipe was to add about 1/4c more milk. We will make these again and again!

Manicotti Italian Casserole

I was surprised at how easy and good this recipe really is! My 5 year old loved it so much that he asked for again the next night for dinner and the day after that for lunch. I made sure to season the ground beef while I was browning it (with garlic, onion, basil, italian seasoning, salt and pepper) and only used about 1/2 lb of sausage. I also did not add the pepperoni as we are not pepperoni lovers here. Overall very easy and will make again!
