Yummy!!! Used coconut milk instead of soy milk and left out the lemon and it totally rocked. My 5 year old is scraping out the bowl right now and can't stop eating it!!!!

Skillet Picante Beef Stroganoff

Added 3 cloves of garlic, sautéed half of an onion in olive oil, added a half teaspoon of herbs and served it over a bed of greens since I'm wheat/gluten and grain free right now. Quick and easy!

Layered Eggplant Hamburger Casserole

OMG, so yummy. I would change the name since I think the name sounds unappealing. But, it was so tasty and delish in every way. My 2 year old devoured it, I did and so did my husband who doesn't usually care for eggplant. My 5 year old ate around the eggplant but loved the other parts. I followed the recipe almost to a tee but forgot the parsley. I did use fresh tomatoes from the garden instead of the can. I thought it tasted a bit like lasagna. It was sooooo good, I will add it to my arsenal for sure!!!!

Stinging Nettle Soup

OMG, yum!!! I have to admit I didn't measure anything and I added way more rice than required. When I lifted the lid after simmering it, it was like a risotto and so so yummy!!! Wow, I'm hoping I can recreate it exactly, it was DELISH. My 1 1/2 year old devoured it and my meat loving husband couldn't get enough. I can't wait till next week when I can buy more nettles at the farmers market!!!!

Anna's Chocolate Chip Cookies

This is THE toll house cookie recipe. The sugar variation is a little different. Toll house cookie uses 3/4 cup of each sugar. Always a favorite. Make sure your eggs are at room temperature. Enjoy!!!!

Pesto Turkey Burgers

yum, yum, yum. Juicy and moist and delish!!! Even my beef eating husband loved it and was surprised. My 1 1/2 year old ate an entire patty too. I followed the recipe except I cut down on the salt. So tasty. I will make it again for sure.

Whole Wheat Banana Nut Bread

I used half coconut oil and half canola oil. It came out super moist. I also added an 1/8 cup brown rice syrup to add extra sweetness after reading the reviews about lack of sweetness. It came a little bit crumbly but delish and moist!!!

Mandy's Lamb Enchiladas

Okay, so I didn't follow the recipe very well since my fridge and cupboards are bare but I did the best I could and it came out so very tasty. I used lamb and seasoned it with garlic, s&p and a ton of Greek oregano. Then I threw in a large handful of chopped kalamata olives, black beans, tomato sauce and salsa. I only had 6 large tortillas so I rolled them fatty style. I added feta and shredded mozzarella to each tortilla before rolling. I topped with more tomato sauce, the leftover meat, salsa and mozzerella. Oh my goodness it was tasty!!!!!! I will make this again!!!!

Pecan Pie V

Pie tasted incredible but the science part of it was a problem. The pie was overcooked. I took the advice of the chefs about turning down the heat but something didn't work out. Again, it tasted like a 5 star pie but the presentation and the fact that it didn't slice was a bummer....

Mexican Rice II

yumm, yumm yumm. It's so simple and so delish. It was my first time making it. I added extra garlic and fresh farmers market tomatoes to make it extra good. It's easy and my one year old couldn't' get enough. I will make this again and again.

Mexican Pecan Cookies

yummmmmy. This recipe is so simple and so delicious. My 4 year old made them with me and they came out perfect. I halved the recipe since I thought that 90 seemed like a lot but I was wrong. They are pop in your mouth good and were a huge hit for all ages. Loved using only 4 ingredients.

Baked Kale Chips

INSANE!!! Yummmy!!!! I watched a You Tube video and followed this recipe (same as the video I watched) and they came out crunchy and delish!!!! The trick is to make sure the leaves are dry before putting on the olive oil otherwise they dont get as crispy. I cooked them for 15 minutes exactly and they were yummy. My 3 year old and I just devoured an entire bunch. We used only a pinch of salt too because I think a teaspoon is too much...

Artichoke Dip

yummm! i doubled the recipe and used half Mediterranean cheese/yogurt and half light mayo. I bought a big round sour dough loaf and hollowed it out and put the warm dip inside. I bought a second loaf to use for dipping. I took it to a potluck and it was gone in about 10 minutes!!! This was fast, easy and yummy!!!

Delectable Marinated Chicken

yummy! I left out the liquid smoke and used garlic powder instead of salt, I also used agave instead of brown sugar. I only had an hour to marinade it and it was perfect. Not too salty and a little sweet.

Rich Chocolate Frosting

OMG, rich, thick, delicious. This is how frosting should taste. I used Dagoba organic cocoa and it is rubber scraper lickin good!!!! I added more milk (oat milk) since it was pretty thick. I also listened to the other reviews and addded a 1/4 cup more cocoa and 1/4 cup less sugar, mmmmmmmmmmmmmmm

Sweet Potato-Turkey Meatloaf

Taste was good but the consistency was super mushy, it was like stuffing. I'm wondering how to get it more like meatloaf. I added extra breadcrumbs and made sure it was firm before cooking it...hmmmmmm. My husband wouldn't touch it but my 3 year old and I ate it and got through it......

Tandoori Chicken II

yummmmmm!!! I added yogurt to the mix and marinaded them for 4 hours. I used boneless thights and cooked them at 425 for 20 minutes and they were juicy, tasty and savory!!! I served it with rice and mint peas. I will make this again and again!!!!

Chewy Chocolate Chip Oatmeal Cookies

Easy Whole Wheat Peanut Butter Cookies

I made it with agave instead of brown sugar and honey and it tasted a bit off, I use agave a lot so I'm not sure what it was.... but my 2 1/2 year old loved them, maybe it's because this is her first peanut butter cookie
