Delicious Pumpkin Bread

This is my new favorite recipe! I halved it, and made one 9x5 loaf. I scaled down the cinnamon because of my preference, but other than that I followed the recipe and it's fantastic. I wasn't sure about the directions at first, but I followed them and this resulted in a light, moist bread with no undercooked bottom. It's best to just mix until blended. Thank you!

Pizza Casserole

I followed the recipe for the most part except I used ground sausage. I loved the egg noodles as the base for it because they don't get in the way of the flavor as thick pastas sometimes do. I used half the cheese to put a layer in the middle. Very easy to make...definitely a keeper!

Brooke's Best Bombshell Brownies

I changed the serving size to 30, and baked them in a 9x13. I baked them for about 32 minutes and they were perfect. Even the edges (which I cut off and save to put in pudding) were soft. I don't like things too sweet, so I did cut the sugar, but next time I'll use the full amount as it really does need it. They aren't gooey-fudgy like the box mixes, but they are dense and rich. I didn't have chocolate chips, so I upped the cocoa powder slightly. It's been a week since I've made them and I kept them in an air-tight container...today they are just as good and chewy!

Beth's Spicy Oatmeal Raisin Cookies

This is my new oatmeal cookie recipe! It's quick, and can be put into the oven right away. I scooped into balls and they only spread after baking slightly, so they were a very round, chewy cookie. 12 minutes was perfect for mine, and while still warm, they had an outer crispiness with chewy middles...however, even now after a week in ziplocks, they are still chewy and just as good! I used all butter, just because shortening is not available where I live, and I added some nutmeg because I love it.

Candy Cane Snowball Cookies

I made this recipe exactly as written, but mine didn't come out looking so great. I chilled for about 5 hours, but upon scooping and rolling them for the baking sheet, they warmed slightly, and as soon as they went into the oven they started to spread. Eventually they baked up semi-flat, with light golden bottoms and crispy edges. Even so, the flavor was really good, even after a week they were still soft and buttery. They would also be great with almond extract instead of the vanilla.

Easy Homemade Pie Crust

Thank you for this one! I can't get shortening where I live and this worked great! I made a double batch to make turnovers with some homemade cherry pie filling I needed to use up. It's been 2 years since I've made Pumpkin Pie....looking forward to it, thanks John :)

West Indian Curried Chicken

This was delicious and simple. I did use regular curry powder, half the amount was perfect, and I tossed in some diced carrots. I let it simmer about an hour, and it came out perfectly tender and not dry at all. I stirred in some frozen peas in the last ten minutes.

Spaghetti Pie III

I have made this many times, but I use penne pasta instead. It definitely can be made healthier with fat free sour cream and cream cheese, and I even toss some diced carrots and tomatoes in with the ground beef while it's browning.

Four Egg Yellow Cake

This was a perfect yellow cake. Not too dense, not too sweet. I used half vegetable oil and half butter only because shortening is not available where I live. Other than that I stuck to the recipe. It did sink a little upon cooling, but made a perfect surface for decorating. Was sturdy enough to slice into 3 small layers and fill.

Sweet Onion BBQ Burgers

I have never been a fan of bbq sauce, but I made these for guests and they were fantastic! The only change I made was mixing in 1/2 cup bbq sauce into the burger mix instead of spreading on top just because I made them a few hours ahead of time and stacked them between pieces of foil. I also had bacon on hand so I put 2 slices on each burger. Will be making these often this summer!

Tex-Mex Burger with Cajun Mayo

These were SO juicy and tasty! I made the patties up a few hours ahead of time along with the cajun mayo. Next time I might add another 1/2 tsp of seasoning to the mayo, but the burgers themselves were just as spicy as I can handle without being too hot. I had a jar of jalapenos on hand so I diced up a few of those, and topped them with lettuce and tomato. Will be making these throughout the summer!

Shrimp, Sausage, and Fish Jambalaya

I wanted to make this as written because it didn't have many reviews, but looked like a good recipe. It was very good! I did use brown rice, so I had to add another 1/2 cup of broth. I chose to wait and put the sausage back in with the shrimp, and I kept it covered the entire time, just because the rice I have takes longer to cook. I also added another 1/2 teaspoon of cajun seasoning because I like the heat, but other than that I followed the recipe. I really liked that it almost had a creaminess to it, and I served it with buttermilk cornbread muffins from this site. Don't let the list of ingredients fool you - this was super easy and didn't take as long as it states. I will definitely make this again, Thanks Baron!

Creamy Carrot Soup

I expected this to be a little on the sweet side, but it wasn't at all. I did use milk instead of cream to cut down the fat, and added a stick of celery for flavor. The potato made it a bit thick, so next time I might omit that to cut down the starch, but I will also double the rosemary and ginger.

Meringue Mushrooms

These were perfect! If you let the stems sit on the baking sheet a few minutes before baking, they become a little stiffer and you can shape them with your finger. Unfortunately, it wasn't humid the day I made them, but it was the next day. They became soft and almost squishy, but I put them in the freezer and they came out fine. Will be making this recipe for other cake decorations as well. Better to make these the day you need them. The longer they sit out, the softer they become. Very tasty and realistic...Simple recipe and easy to do!

Chocolate Ganache

I give the recipe 5 stars, but I didn't care for the dark flavor. I used 1/3 dark and 2/3 milk, and the dark still overpowered the flavor so next time I will use milk or semi-sweet. I whipped this up and spread on a chocolate layer cake, filled with chocolate mousse, and the frosting was too rich to eat. I will make again, but next time I won't put so much on the cake, just a thin coating.

Fabulous Fried Cabbage

This was pretty good. The broth infused the cabbage with a lot of flavor. Next time I would cut the liquid in half, as it cooked in only about 20 minutes or so. I used the butter for the top after it was cooked with black pepper. Yum!

Irish Lamb Stew

I didn't have high hopes for this as I don't like the taste of alcohol infused food, but I wanted to make the recipe as is, and I was very impressed! The flavor was excellent, and though the bacon seemed unnecessary, it was a great addition. I also added some celery and used a dark, yeasty beer. The lamb was very tender and a perfect meat for this stew. I will definitely make this again.UPDATE: I just came back from Ireland, and I must honestly say, this stew beats any that I tried in Ireland! Thanks Danny!
