About this Cook
I have been cooking most of my life, starting out for the family while my parents both worked full time. It is sometimes difficult to try new things, because I don't have open-minded taste buds! I usually stick to the tried and true, but this site gave me inspiration to think outside the cans! I am working on opening my own cake shop in the next couple of years, and for now I make specialty cakes and sweet treats out of my home.
My favorite things to cook
I love pulling things out of the cupboard and coming up with new things, with help from this website. I live in an area of Holland where they have very simple, bland food, without a lot of culture and ethnicity, so I cook a lot of Italian and Mexican food.
My cooking tragedies
My disasters frequently happen on holidays and special occasions, so I have been forced to improvise a lot.

Delicious Pumpkin Bread
This is my new favorite recipe! I halved it, and made one 9x5 loaf. I scaled down the cinnamon because of my preference, but other than that I followed the recipe and it's fantastic. I wasn't sure about the directions at first, but I followed them and this resulted in a light, moist bread with no undercooked bottom. It's best to just mix until blended. Thank you!

Pizza Casserole
I followed the recipe for the most part except I used ground sausage. I loved the egg noodles as the base for it because they don't get in the way of the flavor as thick pastas sometimes do. I used half the cheese to put a layer in the middle. Very easy to make...definitely a keeper!

Brooke's Best Bombshell Brownies
I changed the serving size to 30, and baked them in a 9x13. I baked them for about 32 minutes and they were perfect. Even the edges (which I cut off and save to put in pudding) were soft. I don't like things too sweet, so I did cut the sugar, but next time I'll use the full amount as it really does need it. They aren't gooey-fudgy like the box mixes, but they are dense and rich. I didn't have chocolate chips, so I upped the cocoa powder slightly. It's been a week since I've made them and I kept them in an air-tight they are just as good and chewy!
