Potatoes Au Gratin with Fennel and Bacon

I was a little skeptical after reading some of the reviews. But, I decided to make it anyway and I am so glad I did. It is a wonderfully delicious recipe following the directions exactly. My husband who hates anything out of the ordinary absolutely loved this and even took leftovers to work the next day. A definite keeper!

Pumpkin Spiced Latte

Absolutely delicious and my new addiction! I really enjoyed this latte, especially being so fast and easy with minimal ingredients. I like that it doesn't include pumpkin puree, so I don't have to open a can and freeze the rest. I even used 2% milk and it was still creamy and tasted like the real thing. Thanks for the awesome recipe!

Penne Pasta with Spinach and Bacon

Delicious and easy, how could you ask for anything more?! I had made this several times before and I always seem to forget to rate it (and make it often). It is the perfect pasta dish if you want something fast, easy and tasty. It is light and refreshing. I do skip the olive oil and just use the bacon grease. I top it with feta and a few kalamata olives, but it is good as is. I can't wait for the summer to use fresh tomatoes. Thanks Jean for sharing!

Tortellini Soup

I was a tad skeptical about this recipe and even while making it I didn't want to taste it, because I thought it wouldn't work. Boy, was I wrong! I can't believe something so simple could taste so wonderful. The flavors were just pure and simple that there is no reason to add anything to this soup. I did use fresh spinach, only because that's what I had on hand, but next time I would not hesitate to use frozen. This soup is definitely going on my regular rotation when I need a quick, easy and satisfying meal.

Bean Quesadillas

Another delicious way to have a quesadilla! I made the recipe exactly as written and I wouldn't change a thing about it. We enjoyed ours with olives, pico de gallo and sour cream. Thanks for the awesome recipe.

Jim's Cheddar Onion Soda Bread

This bread deserves more than 5 stars! I have never made or had soda bread before, but I have to tell you I don't ever plan on making it another way. This has to be one of the best tasting breads I have ever had. It was extremely easy and fast to make. I did use AP flour, because I was too lazy to take out the bread flour, but I will next time to see if there is a difference. And I also used green onions, but I may try adding a sweet onion too next time. As for the buttermilk, I did have to had a bit more, but not much. This is a definite keeper that will be made frequently in my house. Next time I'm going to try it as biscuits. Thanks Keri for sharing an amazing recipe.

Ciabatta Bread

This has now turned into my go to recipe for rolls. The dough bakes up just beautiful and makes the perfect roll for sandwiches...light yet with a beautiful crispy top. The dough is quite sticky and I am glad that I have resisted adding extra flour, because I think that is what makes this such delicious bread. This is a definite keeper for such easy and beautiful results!

Corn and Zucchini Melody

What a wondeful vegetable dish! I followed the recipe exactly and wouldn't change a thing. My little guy who doesn't usually eat zucchini ate it all. The monterey and bacon added another dimension to the already delicious vegetables. This will definitely be a keeper in my house.

Pizza Shells

Delicious take on pizza and stuffed shells! I only used one can of tomatoes thinking it would have been too much, but next time I will use both. I did had some crushed red pepper and garlic powder to the sauce just as a personal preference. I used mozzarella only because I forgot the Monterey jack but I think a mixture would be even better. My little guy went crazy for them. Thanks for the awesome recipe!

Tangy Potato, Green Bean and Bacon Salad

Delicious, 10 star plus recipe that I will be sure to make over and over! We are not a big fan of mayo-based potato salads, so I was excited to try this one. I absolutely love the tang from the mustard and the vinegar. I used dijon mustard, because I was out of our usual whole grain mustard, but I could only imagine that it is even better with the whole grain mustard (on my list for groceries already!). The crunch from the bacon just puts it over the top. I paired it with barbecue chicken and it went perfectly, light and refreshing. Thank you Don for sharing your recipes...it will be a definite keeper in our house!

Sombrero Chicken

When I made this for dinner last night, I expected this to be good, but nothing over the top. Boy, was I wrong! This little recipe was absolutely delicious. I did a few things different to prepare this recipe, but did not change any ingredients, and it could not have altered the outcome at all. I chose to grill my chicken, because I just couldn't believe the chicken would cook along with the bacon and veggies. I diced my bacon, cooked it and then took it out of the pan adding it when dinner was ready to be served. Those were the only differences (besides cutting back on the cilantro quite a bit, which is a personal preference). I served it in tortillas with a smear of sour cream and topped with the monterey jack and tomatoes. What a simple and absolutely delicious meal. These turned out to be the perfect fajitas. Thank you Rhonda for sharing your recipe...it will be a definite keeper in our house.

Grilled Wonton Chicken Salad

Delicious and refreshing summer salad! I used homemade teriyaki marinade, which I think put it over the top. I kept everything else the same except decreased the salad dressing since it made a ton. This is a definite keeper for summer grilling!

Chocolate Frosting I

My absolutely favorite chocolate frosting! It comes out perfect everytime and the taste is creamy and delicious. I do use butter instead of margarine, but otherwise everything else the same. The better the cocoa powder the better the frosting!

Tonkatsu / Katsu Sauce

I have been looking at this recipe for quite some time now and kept putting off making it because I was unsure if I would really like the flavors. I wish I hadn't waited this long, because this is a killer sauce. It is a tad spicy for our tastes, but nothing that even my little guy couldn't handle. I definitely think the longer it sits the better, so I can't wait to try the leftovers tomorrow. This went perfect with Chicken Katsu and fried rice. A definite keeper in my house!

Bacon and Caramelized Onion Rolls

What a beautiful and delicious roll! As much as they sound time consuming, these rolls were fast, easy and addicting. The dough was easy to work with, which is always a plus. I may have added a little more filling than it called for, but otherwise I kept everything the same. A definite keeper!

Monkey Bread I

This was really good and so easy to make. The only complaint I have is that I used way less than the cup of sugar it calls for and so I had to throw the rest away....but that is an easy fix. Otherwise a wonderful recipe that I will definitely make again.

Restaurant Style Mac and Cheese

This was absolutely delicious and so, so easy. My son had two bowls full and he usually only likes the boxed kind. I did use a whole box of elbows and ended up adding a little more cream to get to the texture that we preferred. It was rich and creamy and the leftovers are just as good. A definite 5 star recipe. Cranberry Pistachio Biscotti

Wow....this has to be the best biscotti I have ever had. It was my first time making biscotti and it was actually quite easy. The word biscotti makes it intimidating, but I had no problems. I would highly recommend that everyone give this a try, you won't be disappointed.
