What should I make for dinner?
About this Cook
I am happily married. We are going to have our 25rd anniversary this summer. Since my husband and I and our 3 kids were a military family, my recipe box is very diverse. I love to travel and try new things.
My favorite things to cook
Cooking is an expression of love for me, and nothing says love better than southern cooking. Alas, As much as I love it, it doesnt love me. "Soul" food should be called "Butt Enlarging" food. So its healthy, low-cal recipes for me now. The challenge is finding something that is good for us that my family will like. Any suggestions are greatly appreciated!
My favorite family cooking traditions
We take one whole day from morning to night and bake Christmas cookies. Everyone gets involved and we share with all our friends. We have to...there's no way I'm eating hundreds of cookies!
My cooking triumphs
Usually when I don't have all the ingredients for my usual dishes, I just throw what I have together. It almost always turns out to be a recipe that they want me to make again.
My cooking tragedies
I had never tried to make salmon before, so when it was on sale one day, I thought I would try it. I followed a recipe out of a cookbook to the letter but it still turned out REALLY bad. Even the cats wouldn't eat it. It discolored my pan and stunk up the whole house for days. Turns out the discounted fish was spoiled and nothing I could have done would have made it better. Even 22 years later, my family still laughs about the fish that almost killed us.

Onion-Roasted Potatoes
I accidentally put a pack of italian dressing mix in then realized I grabbed the wrong pack. So what could I do...the deed was done. I just added onion soup mix to the batch too. My family went wild. They said I have to do this again. So what are we having tonight? Yep we are having my Uh-Oh Potatoes...go figure

Angela's Awesome Enchiladas
I have a new respect for Mexican food and the people who make it fresh. It is a lot of work but totally worth it. My son in law who is from Arizona raved about this dinner and he is VERY picky. I will definitely make this again!

Rosemary Ranch Chicken Kabobs
WOW!!!! Have never been a big fan of rosemary but these kabobs were FANTASTIC I followed the recipe exactly, something I rarely do, and I am so glad I did. Everyone in my very large family agreed that they were great and I have to make them again. Having them all agree is extremely rare. This dinner was miraculous on all levels.
