Marinated Fajita Chicken

Reviewed: May 9, 2012
I didn't use this as a marinade, I just plopped all the ingredients in the crock pot and set it for low. At about 7 hours, I shredded the chicken, and we ate it an hour later. It was so delicious. After dinner, my husband said he then needed some dessert and went straight for the chicken again. Thank you for the recipe!

Sausage Pasta

Reviewed: Feb. 28, 2013
Perfect. I used fresh spinach instead of frozen, and mild sausage but then added a couple of dried chilies that I crushed. So easy and quick. Everyone ate it up.

Slow Cooker Cilantro Lime Chicken

Love, love, love this recipe. I cook it on low for 6-7 hours and then shred it and leave it in for another hour or two and it turns out perfectly.

Sopapillas

Reviewed: Oct. 14, 2011
My kids and I had fun making these together. Next time I'll make them a little larger, and I wouldn't recommend them warmed up the next day - but I don't know that any sopapillas are good reheated.

Jalapeno Rosemary Alfredo

Reviewed: Oct. 14, 2011
This is perfect. I threw this on some angel hair pasta with some grilled chicken and zucchini, and my kids ate it all up and loved it. Thank you! I've also used it on lasagna rolls that my husband loved.

Brownie Mallow Bars

Reviewed: Oct. 14, 2011
Given the reviews of this being a bit on the sweet side, and the fact that I'm not an enormous fan of marshmallows, I only used half the amount, and it was perfect. I also decreased the amount of chocolate, and next time I plan on adding more cereal than called for. They were super delicious.

Lebanese Chicken and Potatoes

Reviewed: Apr. 6, 2011
This is absolutely fabulous. So easy. I did add just a little bit of oregano and thyme, but otherwise followed the recipe. I did it last minute, so I didn't marinate it at all and it was fantastic. My kids didn't complain, and my husband loved it. Thank you!

Cheesy Acorn Squash

Reviewed: Jun. 13, 2014
I love this dish and have made it often. My husband doesn't care for mushrooms, so I just omit them (sad, I know), and it is still wonderful.

Summer Bean Salsa

I made this and couldn't stop eating it. Then morning sickness kicked in and now the thought of it makes me sick. Literally. It WAS awesome though.

Tres Leches (Milk Cake)

Reviewed: Jul. 14, 2010
I love, love, loved this cake. I used Cool Whip to top it with, and put a dash of cinnamon on top, but otherwise kept to the recipe. Great with strawberries too. Mmmm.

Cake Batter Ice Cream

Reviewed: Jul. 2, 2010
I used 1 cup of cake mix, and actually just used all whole milk instead of cream. It's just what I had on hand since I forgot to buy cream at the store. It still turned out great. A little hard when left in the freezer overnight since it was just milk, but I'm sure it would be great with cream.

Fudge

Reviewed: Sep. 28, 2010
This was fabulous! I can't believe how easy it was to make. We like our chocolate dark, so I did all semi-sweet, and it's wonderful. I might just have to head to the store for every flavor of chips to try it out with them all in the future.

Sweet and Sour Chicken III

Reviewed: Nov. 6, 2007
Wow, I'm not one to get over excited about recipes, but this one is really good. I doubled the sauce - except the soysauce - as recommended, and it was very, very good. I like a little spice though, so I added a couple of chili peppers in adobo sauce for spice and color. I'm definitely keeping this recipe for future use. The only thing I might do differently is put the carrots in earlier. I like them crunchy, but my husband and son do not.

Breakfast Casserole

Reviewed: Oct. 5, 2010
This was exactly what I was looking for. I doubled the recipe except the meat since I'm not a big meat eater, and it was wonderful. The best thing about this recipe is that it is a great starter recipe - there are so many things you could change and it would still be great. I think I'll be trying it with bacon and jalapenos next.

Chocolate Eclair Dessert

Reviewed: Jun. 21, 2014
My family loved this. I decided that instead of frosting, I would melt chocolate chips with a bit of oil (microwave thirty seconds, stir and repeat until smooth), and top with a thin layer of that. It was excellent.
