Pineapple Chicken with Spaghetti

Honestly, I don't think I'll make it again, but I still give it a few stars because: It was very easy to make - one star. The leftovers were edible enough - two more stars.

Chocolate Chip Bars

They're alright when you're in a pinch and itching for a chocolate chip cookie fix. A little styrofoamy, but maybe if I reduced the time in the microwave that would be different... Anyway, they're best with milk to counteract the dryness.

Sweet and Sour Chicken III

Wow, I'm not one to get over excited about recipes, but this one is really good. I doubled the sauce - except the soysauce - as recommended, and it was very, very good. I like a little spice though, so I added a couple of chili peppers in adobo sauce for spice and color. I'm definitely keeping this recipe for future use. The only thing I might do differently is put the carrots in earlier. I like them crunchy, but my husband and son do not.

Ronaldo's Beef Carnitas

Not my favorite. I must add however, that I didn't use foil or extra water and put it in the crock pot for eight hours. It was a bit dry, and not very flavorful. I did use the leftovers in enchiladas the next day, and they were great.

Cake Batter Ice Cream

I used 1 cup of cake mix, and actually just used all whole milk instead of cream. It's just what I had on hand since I forgot to buy cream at the store. It still turned out great. A little hard when left in the freezer overnight since it was just milk, but I'm sure it would be great with cream.

Fluffy Canadian Pancakes

I followed everything exactly, and while the batter certainly was fluffy, it took forever for the middle of the pancakes to cook. I'm sure it must have been an error on my part, since no one else seems to have made this mistake, over beat the eggs? I tried different heat levels once I saw what was happening... I don't know, but they definitely did not turn out.

Tres Leches (Milk Cake)

I love, love, loved this cake. I used Cool Whip to top it with, and put a dash of cinnamon on top, but otherwise kept to the recipe. Great with strawberries too. Mmmm.

Curried Coconut Chicken

I was a bit underwhelmed. As was my husband. We're big curry fans, and I was excited to try a new curry recipe. We both thought this tasted like ketchup. It was good, just not what I was looking for. My one-year-old liked it quite a bit.

Crustless Spinach Quiche

My husband loved this - and he doesn't like onions, so that's saying something. I used fresh spinach, and pepper jack cheese to give it a tiny kick. I think next time I might add a couple of peppers too since we like things spicy. This recipe is nice because it's a great base recipe that you can add easily to. But, personally, my favorite part of quiche is the crust, so it just seemed like a baked omelet to me.

This was fabulous! I can't believe how easy it was to make. We like our chocolate dark, so I did all semi-sweet, and it's wonderful. I might just have to head to the store for every flavor of chips to try it out with them all in the future.

Breakfast Casserole

This was exactly what I was looking for. I doubled the recipe except the meat since I'm not a big meat eater, and it was wonderful. The best thing about this recipe is that it is a great starter recipe - there are so many things you could change and it would still be great. I think I'll be trying it with bacon and jalapenos next.

Meatball Nirvana

Um, I wouldn't exactly call this nirvana. They were good, and our dinner guests could taste some spice (although we could not - we take things on the SPICY side of spicy), however, they don't warrant making again.

Not bad. If I were to make it a second time I'd probably only use half the amount of pasta called for, and fresh basil wouldn't hurt either. But, since it was not a hit with my children and my husband didn't get excited about it, it's going on the back burner.

Vegetarian Chickpea Sandwich Filling

I made this for a fundraiser. It needed to be vegetarian, so this was a good option. We could have gone with a bit less onion, and the end result was okay, but not amazing. I'm on the line as to whether or not we could use this again.
