Pasta Carbonara I

THIS. WAS. DELICIOUS. Also super easy! I followed the recipe with only 2 exceptions. I cooked one cubed chicken breast, half an onion and 3 cloves of garlic in the bacon grease and added it to the pasta after the egg/cream with the bacon. I also added a can of petite peas. Really fast and easy pasta dish!

Sweet and Savory Bacon Wraps

I can never make enough of these delicious treats at parties! I always share the recipe and how easy they are to make. I would warn against using maple flavored bacon, unless you want them took taste like breakfast wraps. I prefer to use them as a savory appetizer, so I use regular smoked bacon.

Clams and Chourico

I.N.C.R.E.D.I.B.L.E! I served this meal over cappelini pasta as I couldn't stand to see ANY of this delicious sauce go to waste. I followed the recipe exactly, with the exception of substituting mussels for the clams. My husband asked if he could just drink the sauce with a straw! A+++ Super quick and EASY, but appears really gourmet. Great recipe!

Braised Flank Steak with Lemon and Garlic

This was my first attempt at flank steak. IT WAS DELICIOUS! I didn't have any lemon juice on hand, so I substituted about 1/3 cup white wine. I actually braised for closer to 2 hours; it was so tender! I served with pasta and steamed broccoli. My husband sopped up the extra sauce with bread. Definitely on the MAKE AGAIN list. Thanks for the great, easy recipe!

Flank Steak with Garlic Wine Sauce

I really liked this recipe. The steak was a little tough, but I'm pretty sure that was of my doing, not the recipe's. The sauce was delicious!

Nikki's Steak Saltimbocca

AWESOME! My grocer's skirt steak looked a little iffy, so I just used top round and pounded it thin using a meat tenderizer. As I am a south-Louisiana girl, I also added some seasoning to the steaks before searing. Otherwise, this recipe is perfect just as it is. Thanks!

Beer Roasted Lime Chicken

VERY GOOD! I, like most, made a couple of modifications to the original recipe. I squeezed a couple of teaspoons of lime juice into the beer and dropped two cloves of garlic in the can as well. I rubbed the inside and outside of the skin with salt, pepper and garlic powder and a little Tony's (cajun seasoning). I did not cover with foil because I LOVE crispy skin! It was moist, tender and delicious. I also made an awesome gravy with the drippings; great with mashed potatoes. I will definitely use this recipe again.
