Mom's Zucchini Bread

Super! I made four loaves so doubled everything. Omitted the oil but I had a huge zucchini and pureed with blender so it is moist. I added 2 cups raisins and 2/3 C chia seeds. Baked at 350° for 1 hour 15 min or until edges start to pull away from sides and tooth pick comes out clean. Oops almost forgot..the huge pureed zucchini was 4 cups (for four loaves).

Irish Soda Bread

I just made this today and it is awesome, great, yummy...I had to use the substitution for buttermilk [vinegar & milk] and used 1 extra tablespoon of sugar and no raisins...very good..oh yeah and I cooked it at 350 for 50 minutes...yum, yum, yum!

Peppermint Meringues

These were soooo good. I tried to mix by hand because I always do and found out the hard way that--yes you need a mixer to mix egg whites!! Well, after breaking my arm off [whisking] trying to make it fluffy, I baked it, and yes they were flat but were still good. Use the mixer!

Pudding Cookies III

I did not have the sour cream, so used mayonaise, and no instant pudding so used the cook & serve kind and then added 1C of milk to recipe. These turned out good! They were very chocolately and moist, really good. I frosted with vanilla frosting too.
