Stuffed Crown Roast of Pork

The stuffing was excellent. The only change I made was to omit the mushrooms. The Crown Roast provides an excellent presentation. My only complaint was that the roast was a little dry but it was still tasty. I will use a meat thermometer the next time and that may solve the dryness problem.

Nana's Squash Casserole

Sweet Potato Balls

I have mixed feelings on this recipe. The mixture was very runny making it difficlt to form the mix into balls. The balls were flat and not really firm balls. I even tried putting the mixture into the refrigerator for a little while before I rolled it into balls hoping it would firm up; but that didn't work all that well. My feelings are mixed because I ordinarily wouldn't make a recipe with results such as this again; however despite how it looked two people at the table, who otherwise do not care for sweet potatoes, actually liked it so I'm going to keep it.

Prime Rib

This was a hit for those who liked their prime rib well done. I like mine on the rarer side. I didn't have any problems with smoke, however next time I will reduce the time that the roast is in the oven. I used a 4 lb roast and will not peak for 60 minutes. Although it was cooked more than I would have liked, it was still very tender.

I thought this recipe was good but a little on the bland side for serving guests. I am Ukranian background and shared it with my mother and she loved it. However, we grew up with rather bland dishes and it actually brought back some fond memories of my grandmother's kitchen and cooking for both of us. The only difference is that my mother thought my greatgrandmother added some tomatoes, so possibly I would try adding a small can of stewed tomatoes the next time I made it.

Coq au Vin alla Italiana

Great recipe. I thought it was very tasty exactly the way the instructions were posted. I will use this again. I served it over mashed potatoes one day and the leftovers over rice the next day and both were equally tasty.

Hot Water Cornbread

I thought this was pretty good. I had never eaten this type of cornbread before so wasn't sure how it should taste. The people I served it to were dying to taste some because their Mom had always made it for them as children and they loved it. They thought it was good but just not as fluffy as their childhood version their Mom made.

Cran-Broccoli Salad

I thought this salad was a nice change and it maintained its crispness the next day as a left-over. I liked that as it is alway nice to have a few dishes that can be made the night before.

Slow Cooker Chicken and Dumplings

I thought this was excellent and will use it again. I did use one can each of condensed cream of chicken and celery, added garlic powder and for liquid 1 cup each of white cooking wine, water and chicken broth. I also cheated and used frozen dough strips. It was easy and very tasty.

Maple Glazed Pork Loin

I rated this a 3 as my roast turned out very dry. I thought it was the cut of meat I used which was a boneless pork loin roast and wondered if it would have been better if I used a roast with the bone in. I really don't like to use that cut as a boneless is so nice to slice. I cooked it for the required time for the size. I saw that only one other person thought thiers was dry. I used soysauce instead of vinegar but that should not have caused the dryness. Any ideas from anyone as I would like to give it another try.

Yellow Squash Casserole

I served this to guests the first time I made it and was hesitant because I hadn't tried it first. It got great reviews and the very picky vegetarian that ate it loved it and asked for the recipe so that was a good test. I will serve this again.

Roasted Salmon with Orange-Ginger Glaze

This receipe was good but I wouldn't say great. I would use it again as my main salmon receipe but I am still looking for a better one. On a positive note, I enjoyed the orange/honey flavor and it was very easy to make.

Broccoli Casserole II

This was a very easy and quick receipe to make. I will use it again as a back-up veggie side dish. I used the Ritz crackers with dabs of butter as I like their taste as a topping better than bread crumbs. I also added 1/4 c diced onions.

Famous Pork Chops

I wouldn't use this rceipe again. It was quick and easy. I baked the chops for 25 minutes and they were done but still tough and the coating was mushy and I like mine crisp. For an experienced cook, I have other tried and true recipes that are better keepers.

Black 'N' White Bean Salad
