Iced Pumpkin Cookies

Reviewed: Nov. 20, 2011
I agree with another reviewer that these don't have to be flattened. I used the glaze in the recipe and thought it was very good as written. I also added a half of pecan to the top of the cookie before baking and felt it needed that for some substance. Another reviewer had added a walnut; however, I had the pecans and like pecan with pumpkin. That same reviewer suggested adding some chopped nuts to the batter and I also think I will do that next time to add substance to the cookie. It is kind of bland without any nuts in it. Otherwise this is a very nice "Thanksgiving holiday" addition to my desserts for a cookie. I only baked it the 15 minutes and that was plenty. They will harden a bit as they cool. The house smells wonderful while they are cooking!

Toaster Oven Pizza

Reviewed: Nov. 16, 2011
I was out of tomato sauce so mixed a little water with tomato paste and it worked out fine. I didn't put the bagel top on, I made several halves and added a little bit of olive oil to the top of the sauce before adding my onions and other toppings. It reminded me of my food economic class years ago. I'm having this again for lunch today. It is quick, easy and good.

Cuban Ropa Vieja

Reviewed: Nov. 10, 2011
This was ok for me. I'm not keeping it in my recipe box as we didn't like it well enough to keep on any rotation or serve to guests. I served it over rice.

Black Bean Hummus

Reviewed: Oct. 26, 2011
Excellent. I added 1 more clove of garlic and didn't have any Greek olives. I served it with Kangaroo Pita Chips.

Neapolitan Cake

Reviewed: Oct. 23, 2011
I've given this a 2 for presentation only. It was very bland. I might try the additions others suggested with 4 eggs, 1c sour cream, 2 tea vanilla, 1 tsp strawberry extract. I agree the cake as written is more about presentation. I also made the Shiny Chocolate Glaze to put on it as recommended by someone else and that glaze ruined the cake, it was so bitter, you couldn't eat it and I ended up taking it home from the party with people leaving it on their plates because of the glaze.

Shiny Chocolate Glaze

Reviewed: Oct. 23, 2011
This was so bitter, I would not use it again. It ruined the cake I made. No one commented on the cake at all and no one definitely asked for a second piece. When I tasted it I knew why. This was way too bitter, ended up scrapping it all off. I saved the cake by making a torte with the crumbs. This was embarassing as I took it to an event without trying it first. It was the worst item at the party.

Mom's Turnips

Reviewed: Oct. 23, 2011
I wanted a few turnip recipes because on occasion, I do like them. I agree with another reviewer that the proportions are all off. I used 1 teaspoon of bacon fat and 2T of brown sugar and kept the rest of the ingredients the same. If I find another turnip recipe, I’d replace this one with it as this was ok, nothing to write about and wouldn't serve it to guests.

Coconut Orange Cupcakes

Reviewed: Sep. 20, 2011
I thought this was great! The only comment I have is that the topping was a little too sweet and the next time I may use 1/4 cup of sugar on that. One other reviewer mentioned to give the oranges a quick chop before folding in and I did that as well. This cupcake has a really nice flavor and is nice and moist. It is a good choice for a special occasion. It did yield 2 dozen for me.

Milk Braised Pork Loin

Reviewed: Sep. 4, 2011
I will use this recipe again and thought the meat was nice and tender and had good flavor. It wasn't over the top but good enough to use as a change in the way I normally cook it. It is more for the family, in my opinion, vice company as it's appearance is more like "comfort" food than elegant for a special occasion. I used pork loin chops.

Momma's Wine Cake

Reviewed: Sep. 2, 2011
Easy to make, tastes good and is very moist. I like the fact that you can add various fruits or just dust it with powdered sugar and it makes a nice presentation with a small amount of work.

Cinnamon Griddle Cakes

Reviewed: Aug. 29, 2011
I thought the pancakes were good, but I've got other recipes I like better so won't keep this one. I didn't care for the pancake/icing combination. I love the icing on cinnamon rolls but it doesn't have the same impact for me on pancakes.

Sugared Asparagus

Reviewed: Jul. 26, 2011
I enjoy the asparagus flavor so I wouldn't use this recipe again as the brown sugar masked the asparagus flavor. I thought the amount of chicken broth made the dish pretty soupy. As written, there was just something missing for me and I felt it wouldn't make a good company presentation dish.

Toll House Crumbcake II

Reviewed: Jul. 17, 2011
This was very tasty and I love that it is a 9x13 pan. I made the recipe as is. Some reviewers said to add more topping but I found the receipe as is was good enough. The first day, it was the consistency of a coffee cake, the second, after putting it in the refrigerator, more like a bar. And I do agree that I liked it better that way but either way it was very tasty. I mixed white, milk and dark reg chips. I made this a second time using applesauce in place of the sour cream and using whole wheat flour for the cake part (not the crumb mixture) as suggested by another reviewer and liked it better than the first time. I liked the second version as a 5 and the 1st as a 4.

Slow Cooker Cranberry Roast

Reviewed: Jul. 17, 2011
This was fantastic and is now in my rotation! I didn't change any of the ingredients. The only change I made was to pour the liquid into a pot and cook the gravy on the stove so I could control the heat and get the gravy done quicker. LOVED IT!

Ham and Cheese Breakfast Tortillas

Reviewed: Jul. 16, 2011
I'd use this again but with 8 eggs as others suggested. Not over the top, but a good additional breakfast meal to add to the rotation.

Old Fashioned Potato Salad

Reviewed: Jun. 30, 2011
I did not like this at all and found it very bland and not very creamy. If it were served, as the submitter suggested with chili, maybe the spice of the chili added some needed flavor to it but standing on its own, it didn't have much. I've tasted other potato salads that are way better.

Sweet Fried Summer Squash

Reviewed: Jun. 8, 2011
I'm putting this in my rotation. I love squash and this was so much easier than dipping in egg and getting your hands all sticky. I also decreased the sugar to 1/4c and instead of a pinch of salt I added 1/4 tsp and then salted them right when they came out of the oil. I fried them in a deep fryer and they turned out great.
