Cowboy Casserole

This was ok as written. My oven broke and I needed a recipe to cook on the stovetop. This put a check in the block, that was about it. I made it as stated, just added some grated cheese on top.

Crescent Layer Bars

I wouldn't use this again. I didn't care for the crescent layer at all. I prefer a magic bar receipe to this any day. The rest of the ingredients were good, the crescent layer is what ruined it for me.

Springtime Strawberry Bars

These were just ok for me despite the "rave reviews". The amount of jam didn't seem enough for the amount of batter. I also sprinkled a dusting of powdered sugar on the top. I liked the combination of the almonds and strawberry and even tried the receipe twice, once with white flour and once with a mix of white and wheat. I did like the white/wheat mix better but still not keeping this one as there are others so much better.

Oven Scrambled Eggs

I modified the recipe to feed 4 but used all the same ingredients. It is an easy receipe to feed a crowd but it is a little blander than scrambling them in a pan. I think next time, I'll use a little less milk and maybe try 1 tsp of dash as someone suggested as I felt it needed a little something.

Stir-Fried Shrimp with Snow Peas and Ginger

I used the sherry and substituted green onions for chives and added a 1/8 cup of shredded carrots. I used a 12 oz package of frozen shrimp, which I dried thoroughly. This is a keeper for me. I found the sauce very flavorful and it was a nice light dish. I served it with white rice.

Butternut Squash with Onions and Pecans

Thought this was good but as another reviewer suggested, I used 1/2 cup pecans. I tried the 1 cup and thought the nuts overwhelmed the great taste of the squash. I love butternut squash and want to taste the squash more than the nuts.

Sweet Potato Casserole II

I'm going to rate this a 4, although I haven't tried it, I use have used one very similar for years and love it. The difference in the one I use is that the receipe calls for 3 cups of potatoes not 4 1/2 and for the topping I also add 1c coconut. No use in duplicating a good thing. I love the addition of the coconut and the 3 cups of potatoes is plenty.

Potato Croquettes

I was looking for a receipe for leftover mashed potatoes, but this recipe didn't cut it for me. I thought the potatoes were dry and fell apart. They didn't give a good presentation on the plate so I would not serve this dish to company and it wasn't tasty enough in my opinion to keep. I’d rather use the leftover mashed potatoes in another way, like Shepard Pie.

Lucky New Year's Black-Eyed Pea Stew

This is a keeper for me. It was nice to have a stew recipe for a cold New Year's Day. I added 2 packages of Carving Board ham along with the ham hocks and it was enough meat. There isn't enough meat with only the ham hocks. I also added 2 more cups of chicken stock. This is excellent.

Chocolate Pretzel Rings

I used square pretzels, green and red dark chocolate M&M's and hershey milk chocolate kisses. This is absolutely great and so easy for this hectic time of the year. It is nice to have a recipe you can whip up a batch within 10 minutes.

Molasses Sugar Cookies

I thought these were great and have added them to my yearly Christmas cookie favorites. I didn't change any of the ingredients. I did put the batter in the refrigerator to harden a little before rolling them in the sugar. They turned out beautiful.

Kentucky Bourbon Sweet Potatoes

I have to agree totally with another reviwer that "the sauce was not absorbed and it did not get crusty and brown". I would not make this recipe again. Hardly anyone at the table even wanted any and most of them like sweet potatoes.
