Orange Sauce for Crepes

I thought this was very good. I used the exact ingredients;however, I cut the recipe in half as it does make a lot. I used the sauce over Barbarella's German Pancake recipe, which I also got from this site.

Easter Breakfast Casserole

I thought this was good and am going to use it for a breakfast brunch; however I gave it a 4 because I have to agree with another reviewer as I don't like my hash browns as soft as they are in this receipe. If you use bacon, make sure you cook it first and crumble it before adding it to the mixture.

Nana's Sausage Dinner

I'll agree this is a fast and simple dish and I think of it more as a comfort food, more for a family dish than a company dish. I like it with green beans or peas.

Pecan Pear Bread

I followed the ingredients listed exactly. I am giving this a 2 because the taste was fairly good. The inside did not cook well and was gummy. I was disappointed because I made two loaves, one for the family and one for friends, which the latter I could not give away because of the reason stated above. I only ate it so as not to waste the 2 loaves I made, as ingredients are expensive. There was a solid rim, 1/4 inch area around the entire loaf that cooked and the rest was cooked but very gummy. I was very disappointed as I liked all the ingredients that were listed and was looking forward to enjoying it based on the other reviews. I will not make it again.

Southern-Style Crowder Peas

This was very good. The only changes I made was adding some miinced garlic and salt to taste. I ommitted the thyme and parsley per other reviewer comments. I will use this again. It even passed one of the picker eater's of the household taste test.

Baked Ziti I

Three words: Quick, Easy, Tasty. I thought this was a very tasty and easy recipe. I gave it a trial run last night as I wanted to use it for my mother's 94th birthday party. Based on reviewer comments, I added salt, minced garlic, basil and oregano (all to taste). I layered 1/2 the ziti,sauce mix and cheese and used 1 cup sour cream. I think I'll try Ricotta cheese next time or 1/2 sour cream and 1/2 ricotta. I really like ricotta but the sour cream was also good. I used Bertolli olive oil and garlic sauce. I didn't think I'd like the sour cream, but you couldn't tell. This is a keeper and a good party or buffet dish.

Spinach and Tortellini Salad

I thought this was very good. Don't add the dressing until just before serving or the spinach will become soggy. It can't keep once the dressing is added so make enough to eat at one sitting. Substituions I made were: 1/2 cup Italian dressing,whole black olives, Asiago cheese, grape cherries, and chopped red onion. I used fresh spinach. I can't imagine using frozen in this dish. I will make it again.

Kielbasa with Peppers and Potatoes

I thought this was excellent. I did modify as suggested by other reviewers and added diced onion and fresh chopped garlic, kosher salt and pepper to taste, as I love those items. It was WONDERFUL!

Healthy Oat Peaches and Cream Muffins

I thought this was really good as far as a healthy muffin alternative. I followed the receipe to a T. I am having a brunch and plan to use it as part of my menu and will use it occassionally as a regular breakfast item.

American-Italian Pasta Salad

I know this recipe got a lot of great reviews from other people; however, I was very disappointed. It was extremely dry and not that tasty. I covered it and let it set in the refrigerator. I even made extra dressing and brought it along for those who wanted to add a little more. The only change I made was using ham in place of salami. It just wasn't a hit at all. There were about 20 people at the party as samplers and not a one said it was good or asked for the recipe. And this was a group, that when a recipe is good they all want a copy.

Pina Colada Cake I

I thought this cake was terribly dry and tasteless. I will agree with one of the other reviewers that the rum/pineapple/coconut mixture was good. I made it for the 4th of July and luckily it was just family who tried it as I honestly would have been embarassed to serve it to guests. No one wanted another piece or to take any home so I'll end up throwing what is left away. I read other reviewers comments prior to making it so made sure I increased and made larger holes but it still was very dry and tasteless. I would recommend making more liquid as there seems to be an insufficent amount of liquid topping for the size of the cake. If making this for company, I'd recommend giving it a trial one on yourself first to be on the safe side.

Cucumber Potato Salad

I and my 4th of July cookout guests thought this was a very good salad and a nice change from the classic potato salad recipes with the addition of cucumber and dill. I'll use it again because I liked the change. I didn't have cucumber ranch salad dressing so took the advice of another reviewer and added some pured cucumber, which worked out well. I will use this recipe again.

Open-Faced Crab Melts

I thought this was a quick, simple recipe and one that, as the originator said could be used for any occasion from a teaparty, shower to an unexpected luncheon guest. I like to have something in the house that I can whip up if that unexpected guest shows up around lunchtime and this definitely fits the bill. I will use it again, both for company and myself. I am a crab lover. The only modification I made was to use 8 oz of crab because I had some fresh Phillips crab on hand and it came in that quantity. I prefer fresh but I bought a can of crab to keep on hand for unexpected guests. I always have the remaining ingredients on hand. Thanks for the recipe.

Baked Apples

This recipe brought back memories of baked apples simmering on my grandmother's stove. That smell was so comforting and sent such a wonderful aroma throughout the kitchen. Not only were they good back then but this recipe proved just as tasty. I think the slow cooking on the stove was the key to the aroma filling the kitchen, which the short time cook in the microwave couldn't duplicate. However, the taste was great and brought back many memories. It was easy and quick. I did add the chopped walnuts and thought that was a great suggestion and cooked one Fuji apple in a covered container for 4 minutes and it turned out perfect.

I found this recipe quite good the way it was but maybe my pinches are a little more than just a pinch on the spices:). I found the idea of putting the dry ingredients in a baggy very useful and it avoided a lot of mess handling the ingredients by a dipping method using either your hands or a fork.
