Homefried Potatoes with Garlic and Bacon

The next time I make it, I will drain all but 2T of bacon grease before adding the onions and potatoes. Other than that, it was very tasty.

Corned Beef and Cabbage

This was great and easy! I replaced another receipe from this site that called for George Killian’s Irish Red Beer and although that one was good, this I felt was better. I did not cut my brisket in half and found I only needed to cook the meat 5 hours and then another 2 after I added the cabbage. Excellent!

Amazingly Easy Irish Soda Bread

This is excellent! I had initially tried the Better than Grandpa McAndrews Irish Soda bread recipe on this site and thought that was good until I tried this one! This one had more flavor and although the other was good, this was a step above in my opinion. I followed the advice of another reviewer and added raisins and craisins. I made another two loaves the next day!

Grandpa McAndrew's Irish Soda Bread

I thought this was a good, easy receipe. I used the ingredients as stated and it turned out fine. I saw no need for salt as another reviewer suggested. It is supposed to be a flat, solid bread. It tasted great for the type of bread it is and I was looking for a traditional type Irish Soada bread for St. Patrick's day that was easy and this fit the bill.

Slow Cooker Salisbury Steak

I won't be using this recipe again. I did not care for the taste of the meat. The gravy was fine and especially good on the mashed potatoes I served with it, but again the meat did nothing for me or the two other people to whom I served it.

Strawberry Oatmeal Breakfast Smoothie

I'm not a health nut or vegan but I am trying to eat healthier and looking for recipes which I can transition. Outside of the powdery consistency of the oatmeal, I found this to be quite good. I will make it again and hope my taste buds will adjust to the oatmeal, as I know it is good for me:). I did eliminate the white sugar as I found it was sweet enough without it. I haven't quite made the soy milk transition and did use 2% milk.

Sausage-Stuffed Squash

I thought this was very tasty. I did substitute turkey sausage and, as suggested by another reviewer, added pecans and liked the idea of dried cranberries to try the next time. I will use this again and think it is a good winter and holiday side dish.

Pierogi (Polish Dumplings)

I thought the receipe was good but not great. I thought the dough was a bit dry and the filling a bit loose compared to the filling my grandmother, mother and my friend's mother use. My grandmother and mother used Farmer's cheese in the potato filling but I can't get it where I live so I substitute cottage cheese and find that I like the addition of the cheese better than the Potato filling listed. As far as the dough was concerned, I don't use sour cream, I use 1/3 c water for my liquid, 2 eggs, salt, no baking powder and find it makes a good medium-soft dough. I put it in a plastic bag so it won’t dry out, if I'm not going to use it right away, after I've kneeded it. When ready to assemble I divide dough in half. On a floured board (surface) roll out each half to about 1/8” roll and cut in ¾ in pieces and flatten with my hand, insert the potato/cheese filling and crimp it around the edges. My grandmother used to roll out the dough and use a glass to cut circles to ensure a more uniform size. For the potato mix, I peel and cook 5 potatoes. Mash and add ¼ stick of margarine and ½ large onion that has been sautéed in butter and 4 oz of small curd cottage cheese and cooled in the refrigerator until it is a bit stiff. I am always looking for a bettr one though so enjoy trying all submissions.

Oatmeal Waffles

I thought this was a very good, hearty waffle. I was glad that another reviewer stated how many waffles it made (4 or 16 pieces if you cut each waffle into 4 sections) as that gave me a good idea as to the quantity to make. I found that these were so hearty we could only eat 1/2 waffle each. The only change I made was to substitue white flour for wheat and used canola oil, as suggested by other reviewers and that worked out well for me. I think the next time I make it, which it will be a keeper, I'll add some chopped pecans. I put leftovers in the freezer to enjoy another day.

No Crust Strawberry Pie

I will make this again as I can't find too many dessert that I can serve that don't have too many calories. Once I find more, I doubt that I will keep this one. I found it a little "rubbery" the next day when we ate the leftovers. That was disappointing as we found it to be quite tastey with lite cool whip the first day. I would definitely use the cool whip when serving this.

Pecan-Oatmeal Pancakes

I thought these were heavy, but tasty and will use the recipe again as a nice healthy alternative to white flour pancakes. I made the following modifications: Used wheat flour, added 1/4c additional milk as the batter was very thick. These are very filling and you will proably only need about 3 per person. They do freeze nicely.

Corn Casserole

This is very good and an easy side dish to put together. I modified to 1/2 c margarine and used one can of whole kernel corn and 1 can creamed corn and 1/4 c chopped onion. I served it with meatloaf and mashed potatoes and salad.

Rib Eye Steaks with a Soy and Ginger Marinade

This was very tasty! I followed the recipe exactly, marinating it overnight so the marinade pentrated into the steaks. I love rib eyes, they are one of my favorite cuts of steak and this marinade was puuuuuuuuuuuuurfct.

Twice-Baked Sweet Potatoes With Mini Marshmallows

I liked the idea of the do ahead on this recipe as I love being able to prepare side dishes the night before and leaving my oven free for the turkey. This allowed me to do it and I love sweet potatoes. I used regular milk and omitted the buttermilk and added one egg and sprinkled chopped walnuts and brown sugar on top. The blender didn't work for me. I ended up mashing the filling.

Pumpkin Roll Cake

Excellent. I was so glad one reviewer posted that she forgot to grease and flour the paper as I did too. I guess I can't read well as it was right there in front of me and yet I still forgot to do it. I did what her "wonderful" husband suggested and he saved the day for me too:). This is a keeper.

Cranberry Walnut Relish II

I thought this was really tasty. I think my family members are used to the "canned" taste and preferred the Ocean Spray jelly type. I however, thought it was really good. I like cranberries and nuts and liked the crunch from the nuts. It was a nice dish to serve for guests. I did rinse the cranberries and put them through a chopper prior to using.

Crunchy Green Bean Casserole

I rated this a 4. It was good but I didn't think it was any better than the traditional green been casserole, but it was a nice change. I fried my bacon until it was nice and crip and drained it well and didn't find that it was greasy at all.
