Raspberry Fudge Truffles

Reviewed: Dec. 18, 2014
This was a similar recipe to Maria Jalosznski (Raspberry Fudge Balls) on this site--the only difference is that this one increased the jam by 1/4 cup and there were no nuts (her recipe was rolled in nuts). I didn't care for hers or this one despite the rave reviews. I won't make it again. It was too mushy for me.

Pork Chalupas

Reviewed: Dec. 9, 2014
This was great and soooooo easy. I cut it in half though as it makes a TON! Even cutting it in half--I froze some. I also tried this as enchiladas using recipe from another reviewer and that was great too. I would recommend sticking around to monitor the beans so you can add water, if you use dried beans in this so they don't stick to the bottom of the crockpot. I prefer the dried beans to can.

Holiday Chicken Salad

Reviewed: Dec. 4, 2014
I thought the spices in this were terrible! I ended up throwing it out after one sandwich. I didn't care for the seasonings salt or paprika mix.

Turkey Potato Casserole

Reviewed: Nov. 30, 2014
The concept for this recipe is fantastic--what a great idea (a turkey shepard pie). I sauteed 1T minced garlic to the onion in 2T butter. After these were cooked, I added the soup and 1/2 can milk. I read other reveiwer comments and thought they were fantastic--I had some leftover corn so added that along with the green beans, used 1 8oz pkg grated cheese and topped the mashed potatoes with crushed fried onions. I needed that crunch. This is a keeper for me with the added comments of other reviewers. I felt it would be too bland for my tastes as originally written. The concept is great.

Saltine Toffee Cookies

Reviewed: Nov. 24, 2014
Fantastic and such an easy holiday gift to prepare. Around the holidays it is nice to give a home-made gift and this one couldn't be easier. I did take the suggestion of another reviewer and used n 11x17 jelly roll pan and increased the number of saltines to cover the pan (the rest of the ingredients remained the same). I also used parchment paper (didn't have to spray it). I used a metal spatula to spread the chocolate. I tried using a plastic flexible one and it wasn't spreading easily--the metal one made it much easier.

Hoisin Pork Stir Fry

Reviewed: Nov. 13, 2014
Excellent. I think the Hoisin sauce was the right amount. I substitued red Sirachi sauce for pepper flakes--only reason I didn't give it a 5.

Dumplings

Reviewed: Nov. 8, 2014
These were tasty but fell apart during cooking. I will try them one more time before giving up on them--as they did get quite a few reviews.

Fluffy Pancakes

Reviewed: Nov. 4, 2014
This is great just like it is. I have also added pecans to the existing recipe and find that a delightful addition.

Brazilian-Style Beef Ribs

Reviewed: Jul. 8, 2014
I didn't use water. They were good; however, they fell off the bone so you couldn't pick them up by the bone (I like to hold on to a bone:) Very easy to prepare.

Chef John's Corned Beef Hash

Reviewed: Jul. 3, 2014
This was ok to me. It would have been terrible without a sunnyside egg dropped on top. That added some extra flavor it needed.

Beer Brats

Reviewed: May 27, 2014
Very good and so easy for a large crowd. I took the tip of another reviewer who kept the brats warm in the crockpot as it freed up the grill for other barbecue items and it kept the brats warm during the entire cookout. I also added a some butter as suggested by another reviewer. This was really good. The recipe mentioned sauerkraut; but didn't provide instructions on how that was cooked? Any ideas from anyone if it would work out if you added it to the beer broth?

Amazing Cocktail Sauce

Reviewed: May 12, 2014
I didn't use the chile-garlic sauce and only 5 drops of Tabasco (hot sauce)as I don't care for real spicy cocktail sauce as I was serving this with shrimp that had been cooked in old bay seasoning, which was already spicy.

Awesome and Easy Creamy Corn Casserole

Reviewed: Apr. 23, 2014
This is a bread not a casserole. I thought it would come out as a creamy corn side dish; but it was more like a corn-bread. I have added it to my bread receipes. I took suggestion of others and used 1 egg, 3 TBSP melted butter and 1/4 cup chopped onion. I baked it in a round casserole but would recommend a square dish so it can be cut as a bread in squares.

Corned Beef Waffles

Reviewed: Mar. 20, 2014
I thought the waffle recipe itself was very good. The addition of the corned beef was fair and I decided with the price of corned beef, I'd rather have the corned beef as a main entree. I did keep it as a possible in the event it would spark a guest interest over during St. Patrick's day. I would not use canned corned beef and I would definitely use a fried egg over the top of it as another reviewer suggested. It was the fried egg that made the receipe with the corned beef worthy of keeping.

Cowboy Skillet Casserole

Reviewed: Mar. 8, 2014
I omitted the peppers but other than that, I thought this was pretty good. I did add an 8 oz package of shredded cheddar cheese on top of the meat layer. I used an 8x8 pan and it was perfect. I will keep it for a now and again recipe.

Paleo Omelet Muffins

Reviewed: Feb. 1, 2014
I thought this was pretty good for a quick on the go breakfast. I used the muffin liners but it did stick so suggest spraying them as well. I agree that the addition of some cheddar cheese is a good one. I like that it is so versitle (will try bacon next time as I am not a fan of ham and egg). I followed directions as is.

Pork Sweet Potato Stew

Reviewed: Jan. 30, 2014
This is a keeper for me. The only change I made is to use 2 pounds of pork and 3 large sweet potatoes. Yummy on a cold winter evening.

Baked Kale Chips

Reviewed: Jan. 20, 2014
Too salty for me. Even though you can adjust the amount of salt, trying to get the Kale dry enough and then to monitor the process in the oven so they were crisp enough wasn't worth the effort for the taste of it. I didn't find them tasty even those that were crisp. I won't be using this recipe again. I do enjoy Kale soup however on the package of the pre-washed Kale.

Ham Ball

Reviewed: Jan. 15, 2014
This was great, as is! It would have been a little too much for me to eat so I did cut the recipe in half and rolled it in a log instead of a ball. Only because the ball would have been too small. I make a ham shoulder frequently and this is a great way to use some leftovers. I chopped the ham shoulder for my ham. This would make a nice gift along with a box of quality crackers around the holidays.

Butternut Squash Casserole

Reviewed: Jan. 10, 2014
I agree with others and only used 1/8c of sugars and same with butter instead of margerine. I omitted the pineapple completely and decreased all other spices by 1/2 and it was still sweet and tasty enough.
