Spruced Up Mashed Potatoes

This is a fantastic addition to a Thanksgiving meal. The added ingredients add such a subtle savory flavor. Absolutely delicious!

Best Ever Spinach Artichoke Dip

I left out the potatoes but added chopped carrots for color. I mashed the vegies rather than pureeing them. Wished the soup was creamier (maybe the potato would have helped that) but flavor was great. Will try it again.

Glazed Meatloaf I

Used mostly ground turkey and then some lean ground beef. I did use the beef granules and a tsp of minced garlic. Also used 1 cup crushed cornbread stuffing instead of the torn bread. My loaf was a bit dry but I cook it on a cookie sheet rather than in a loaf pan. Will reduce cooking time slightly next time but also add a bit more of that yummy glaze to the meat. All eaters at the table loved it. Meatloaf sandwiches for tonight!

Garlic Chicken

Made this as an alternative to the ham at my Easter Potluck for those who avoid pork. GREAT, moist, tasty, EASY recipe. I used "garlic seasoned breadcrumbs." Instead of infusing the garlic in the oil by heating it, I marinated the meat in a ziplock bag with the olive oil and garlic for 24 hours. Good leftover and added to a salad.

Pork Chops in Beer

Very easy, very tasty. The changes I made: used one cup chili sauce, 1 cup catsup. Used 3/4 cup brown sugar but NOT PACKED, added 1 tsp dry mustard, t tbsp Worcestershire sauce and used almost all the beer (drank a couple of ounces myself!) My 18 year old was skeptical but really liked it. Great sauce to spoon over rice.

Corned Beef and Cabbage I

Fantastic! I have always kind of "winged" it with corned beef and cabbage, with varying degrees of success. I read many of the reviews and added a bottle of beer to the water to simmer the meat in. WOW! This is it! From now on, no more winging it! For spices, I used the packet seasonings, some minced garlic. Added unpeeled red potatoes, onion slices, baby carrots and of course cabbage wedges.

Banana Bread VIII

I tried this recipe and used yogurt in place of the shortening. It was a very dense, sticky bread. VERY tasty but I like a lighter bread better.

Broccoli Cheese Soup V

Excellent. I had 3 pounds of FRESH broccoli to use up so I chopped some of it up instead of using frozen. Simmered it a little longer in the broth. Added some chopped carrots and minced garlic to the onion. Used a little red pepper for kick.

After-Thanksgiving Turkey Soup

YES! Finally a delicious and SATISFYING turkey soup!I followed the instructions to the letter EXCEPT: added some leftover fresh cauliflower to the vegies and threw in about 3 handfuls (my hands are small) of uncooked egg noodles instead of the rice. Only had to simmer it about 10 minutes to cook the noodles.

Pot Roast in Beer

So easy. So tasty. I used my crockpot. Seared the meat first and sauteed the vegetables. Used Cream of Mushroom with Roasted Garlic soup. I used a tri-tip roast and it was so moist and tender that my 17 year old who is NOT a red meat fan, loved it. Next time will cook some wide egg noodles and serve it like a stroganoff.

Brown Sugar Meatloaf

Yummy. My sixteen year old says it's a keeper. We loved the brown sugar glaze...just the right amount of tangy and sweet. I will cut back on the milk (to 1/2 cup) and maybe increase the cracker crumbs (Townhouse) because I use 1/2 lean turkey and 1/2 lean ground beef and I think the turkey usually needs a bit of "firming" when I use it in recipes.
