Broccoli, Rice, Cheese, and Chicken Casserole

Opted out of using minute rice on this as well, used medium grain rice, makes for a much creamier consistency. Used 2 cups, this made for a nearly-overflowing 13x9 baking dish full when combined with all other ingredients. You DO need the onion for flavoring, DO NOT leave this out! Opted for a 3-cheddar blend of shredded cheese instead of Velveeta or other processed cheese block, this and the extra rice completely took care of the possibilty of 'soupiness' in this. I actually ended up pre-cooking the broccoli because it needed to be chopped better (I bought florets instead of just chopped broccoli so not so many stems in this), onion, and added all other ingredients in and mixed on the stovetop instead of just mixing in the baking dish to put in the oven. I also added in a 14-oz can of mushrooms, drained. I did bake this after mixing on the stovetop for everything to warm through comepletely. Ended up not having to stir anything in the middle because of stovetop prep! Totally make-ahead and freeze friendly, reheats great after thawed!

Chicken and Bow Tie Pasta

DELICIOUS!! My boyfriend rated this as the best recipe I've made him so far, and I cooked a week straight for our meals :) Definitely best with fresh ingredients, as I used a frozen peppers/onions mix to try to save a little time...so that was my shortcut gone awry in that they were too mushy. I also added mushrooms to this, as I love mushrooms in every dish I make. To save more time, I also cut up the chicken into 1 inch cubes to cook instead of boiling in a pot of water.

Deviled Eggs II

Chewy Chocolate Chip Oatmeal Cookies

Great cookies, nice and chewy. I would double the semisweet chips if you are looking for more of a chocolatey taste. I got the regular size morsels, I think the mini morsels would do better next time I make these.

Allie's Mushroom Pizza

This was SOOO good! Fresh mushrooms and fresh spinach really made this the best. You could use frozen chopped spinach and canned mushrooms as well if you always want to have ingredients on hand to make this. Recipe says to cook at 350 for 8-10 minutes, but thicker crust pizza will take about 20-25 on that temp. I followed the 450 for 8-10 minutes that was on the pizza bread I bought and it came out crisp around the edges and soft in the middle just how I like it.

Beef Stroganoff II

This is one of the easiest recipes for stroganoff I have ever made. Also, one of the tastiest :) I make this every couple of weeks for a full week's worth of lunches for work and I NEVER get tired of it!

Penne with Spicy Vodka Tomato Cream Sauce

Great, creamy sauce. There is a local restaurant where I live that makes a dish like this, and this tastes almost just like it! Need to double the sausage to make sure there is enough to go around with all the pasta and sauce.

Easy Homemade Chili

Cheeseburger Soup I

Great cheesy soup! I have only made this one time so far, but I believe the next time I make it I will use half Velveeta and half cheddar for a more creamy consistency. Also, the cheddar tends to separate from the other ingredients on the following days when reheated in the microwave, so I believe different cheese added in like this will help on this issue as well. Great taste overall, perfect for cold days!

Artichoke & Spinach Dip Restaurant Style

EXCELLENT! Made this with my mom, she added a bit more alfredo sauce, parmesean cheese, and smashed up the minced garlic to a fine paste. Used an electric hand mixer to beat small cubes of cream cheese with the sauce and garlic before adding in the spinach. Came out SOO good!

Simple Hamburger Stroganoff

Boilermaker Tailgate Chili

This is THE BEST chili EVER!!! I recently went on a vacation to GA to visit my boyfriend and made this chili for him with some buttermilk cornbread. He absolutely LOVED it, I got nothing but praise the rest of the week on this wonderful dish.

Salsafied Chicken and Rice

Great, easy recipe! I make a week's worth of lunches every week for work, and this was quick and simple. I added some leftover green peppers I chopped up from making stuffed peppers the week before and it was a nice touch. You could even add a can of green chilis for some extra zest instead of the peppers. After it was all cooked and combined, I added some sour cream...delicious! Ended up a bit dry, that's why the add-in of the sour cream when served.
