Baked Buffalo Chicken Strips

The buttermilk soak made this so tender! We really loved this and will add it to our regular meal plan. A healthy alternative to processed or fried chicken fingers. Thanks for sharing.

Orange and Onion Salad

This is a favorite fall dish. Use fresh oregano if possible - much better than dried in this dish. Slice the onions very thin. I omit the chives, but salt and pepper lightly. Use a good olive oil and red wine vinegar. very refreshing!

Serbian Ground Beef, Veggie, and Potato Bake

We really enjoy this recipe. We love exotic flavors, so I probably double the spices (just eyeballed it) and I always add extra red pepper flake at the table because I like it hot! I've read reviews that suggest layering the potatoes but I've also just tossed them in and mixed everything together and it still tastes great.

Eggplant Parmesan II

This ended a 10 year feud with my husband who claimed, "I hate eggplant". I called him out because I've never seen him try it to begin with! I'm gluten free, so used cornmeal with Italian seasoning to dredge the eggplant, baked 10 minutes each side, followed recipe exactly other than that. Incredibly delicious! My doubting husband ate THREE helpings and my picky teen ate hers as well. I felt so healthy giving us a vegetarian dinner option. This is a great, affordable meal. Thank you!

Gluten-Free Peanut Butter Cookies

I'm gluten free and when I get a sweet-tooth, it's the worst!This cookie recipe will be a keeper, thank you for sharing. After reading some reviews, I added a bit of baking soda and vanilla. They didn't spread at all, but made a moist cookie! Coconut flour cookies are like eating sawdust. I also used Splenda to save on some calories. Next time I'll add coconut - I didn't have any on hand today. Oh, and I baked on Silpat and parchment paper and they slid off very easily. It will be hard to keep these away from my husband and daughter who eat regular baked goods till the cows come home - hand's off, these are mine!

Peanut Butter Vegetable Chicken Soup

My teenager requested this soup today so it's bubbling away! I make my own stock and sometimes don't have all the veggies but it's still great every time. Today I doubled the peanut butter, since that's my daughter's favorite part, and we didn't have broccoli or zucchini, but it's still great. Thanks for a simple yet unusual recipe.

Awesome Slow Cooker Pot Roast

This makes a very rich gravy. We had a smaller roast, but the gravy was so good, my husband saved it to use the next day over biscuits. Next time, I may add a splash of white wine, carrots, and sliced onions. Thanks for an easy and tasty week night dinner!

Michelle's Coconut Chicken Curry

This was a great "curry in a hurry" dish. I jazzed it up (we like it spicy!) and followed some other suggestions. I took the lid off and let it simmer down so the sauce could thicken at the end. Here's what I added: sliced carrots, frozen peas, extra garlic (4 cloves total), about 1 t. red pepper flakes, 1 t. garam masala, and increased the curry powder to 4 T. We all loved it and plan to put this dish on rotation, for sure! (served with Naan bread and cucumber raita - greek yogurt, shredded cucumber, diced jalapeno, cumin, salt, cayanne). Thanks for this easy dish!

Curried Coconut Chicken

I didn't think this was going to be as wonderful as it was! I'm used to grinding tons of spices to make an Indian dish, but this was warm and comforting and delish! I added some red pepper flakes because we like it spicy, and removed the lid the last ten minutes to thicken the sauce. We served this with a cucumber raita and naan bread and basmati rice. yum! Thanks for the recipe.

Delicious Ham and Potato Soup

This is wonderful and so easy! I used a hand masher a few bumps to break up some of the potato pieces before adding the white sauce, and also chopped a few extra carrot sticks I had left over. Definately a keeper. Thanks for the recipe!

Pebber Nodder (Danish Christmas Cookies)

I loved the fact that these weren't too sweet and are perfect with a cup of tea, but my husband and daughter both didn't care for them, therefore the 4 star rating. I'd still suggest it, however, for a nice change from the sugar-overload we all experience at the holidays.

Juiciest Hamburgers Ever

These are truly incredibly juicy hamburgers! They reminded me of the way I make meatballs, as some other reviews said. I've made these several times and I thinks they're also good with some finely chopped shallots added to the meat mixture. It's also a way to made lean meat much more appealing in a burger.

Eileen's Spicy Gingerbread Men

This is a great recipe for cut out cookies. The spice was in the middle - I added a bit more ginger. A great tip is to work in small batches as you're rolling the dough out and put the rest in the fridge. Once this dough gets warm, it is tricky! We melted white chocolate and used that to pipe on decorations - much easier to stack and store than softer icing. Thanks for the recipe!

Simple BBQ Ribs

My husband has always been leery of trying to make ribs, but this really was super simple and tasted wonderful! We used Sweet Baby Ray sauce and it turned out great. We've already made this a few times! Thanks for the recipe!
