Newport Clam Chowder

I have been looking for a fabulous Clam Chowder recipe as my husband is a big fan and orders it whenever we go out to eat. I don't usually like clam chowder but this one was great. It was even better the next day! If you are making it for company, make it the day before. I only used 2 bottles of clam juice, substituting chicken broth for the others, I added celery and I used canned baby clams as suggested by others. This is a keeper. My husband loved it! I will be making it again.

Red Pepper Soup

I found this recipe when trying to find something new to use up ALL my peppers from my CSA box. This is a keeper! My husband and I both loved it. The only thing I added was a 1/4 tsp of cayenne pepper. Delicious!

I made these as appetizers. Instead of butter, I sprayed between layers of philo with butter spray. I cut them into squares and pushed them into a mini muffin pan. I scooped the filling into each "cup" and baked them. They were a hit. Except for presentation, I didn't change a thing. These are delicious.

Quinoa Tabbouleh

Quinoa actually tastes a lot better if you soak it at least 8 hours first, 24 hours is even better, it gets rid of ALL the bitterness and actually tastes kind of sweet. I tried just rinsing and I tried soaking for an hour, but I have a sensitive pallate and I could still taste the bitterness.
